Cheesecake Layer
- 16 oz (450 g) cream cheese, softened to room temperature
- ½ cup (100 g) granulated sugar
- 2 large eggs, room temperature
- ½ tbsp (7.5 ml) vanilla extract
Cookie Layers
- ¾ cup + 1 tbsp (185 g) unsalted butter, browned and cooled to room temperature
- 1 cup (200 g) dark brown sugar, packed
- ½ cup (100 g) granulated sugar
- 2 large eggs, room temperature
- ½ tbsp (7.5 ml) vanilla bean paste (or vanilla extract)
- 2 ¼ cups + 1 tbsp (280 g) all-purpose flour
- ½ tsp (3 g) baking soda
- ½ tsp (3 g) salt
- 1 cup (170 g) semi-sweet chocolate chips
- ¼ tsp flaky sea salt (for topping)
Instructions
1. Prep the Pan & Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking pan and line it with parchment paper, leaving an overhang on the sides for easy removal.
2. Make the Cheesecake Layer: In a medium bowl using an electric hand mixer or stand mixer, beat the softened cream cheese and granulated sugar together until completely smooth and lump-free. Add the eggs and vanilla extract, mixing just until fully incorporated. Set aside.
3. Mix the Wet Cookie Ingredients: In a large bowl, beat the room-temperature cooled brown butter, dark brown sugar, and granulated sugar together until light and fluffy. Add the eggs and vanilla bean paste, beating continuously until the mixture lightens in color and thickens up nicely.
4. Combine Cookie Dough: Whisk together the flour, baking soda, and salt. Fold the dry ingredients into the wet mixture until about 90% combined. Add the semi-sweet chocolate chips and gently fold just until a dough forms. Do not overmix.
5. Assemble the Layers: Press half of the cookie dough evenly into the bottom of your prepared 9×13 pan to form the base layer. Pour the cheesecake filling directly over the cookie base, spreading it into an even layer. Flatten remaining pieces of cookie dough between your hands and scatter them sporadically over top of the cheesecake layer. Press in extra chocolate chips if desired, then sprinkle with flaky sea salt.
6. Bake: Bake at 350°F (175°C) for approximately 35 to 40 minutes, until the cookie dough topping is golden brown, the edges are set, and the cheesecake center is set with only a very slight, firm wobble when the pan is gently shaken.
7. Cool & Chill: Remove from the oven and allow the bars to cool completely at room temperature for 1 hour. Transfer to the refrigerator to chill for at least 2 to 3 hours (or overnight) until firm before slicing into approximately 96 bite-sized squares.
Tips for Success
Flatten Top Dough Pieces: Make sure the pieces of cookie dough you drop on top of the cheesecake layer are flattened out thin in your palms. Thicker clumps will sink into the batter and won’t bake through evenly.
Slice Clean Squares: Use a long, sharp chef’s knife to slice into bites. Wipe the blade clean with a damp paper towel between every single cut to keep the cream cheese edges perfectly sharp.
Cool the Brown Butter: Let your browned butter cool back down to room temperature before beating with the sugars. If it’s too hot, it will melt the sugars and cause greasy dough.
