These Brown Butter Espresso Brownies are the ultimate fusion of nutty, rich, and bold flavors. By browning the butter first, you unlock a deep toasted aroma that perfectly complements the intense kick of espresso powder and dark cocoa. These aren’t just brownies; they are a decadent experience with a crackly, papery top and a center so fudgy it’s almost like truffle.
The secret to their incredible texture lies in the combination of semi-sweet chocolate chips melted directly into that hot brown butter. Whether you’re a coffee lover or just someone who appreciates a high-end dessert, these brownies bring a “modern magic” to your kitchen that’s sure to impress.

Why You’ll Love These Brownies
• Depth of Flavor: The brown butter adds a savory, nutty note that balances the sweetness of the chocolate.
• Intense Chocolate: Using both semi-sweet chips and dark cocoa powder creates a multi-layered chocolate experience.
• Perfect Texture: They have that sought-after glossy, crackled top and a dense, chewy interior.
• Espresso Kick: The espresso powder doesn’t make them taste like a latte; it simply acts as a flavor booster to make the chocolate taste more like itself.
Ingredients
- 1 cup Unsalted Butter, browned (227g)
- 1 1/4 cup Semi-Sweet Chocolate Chips (225g)
- 1 cup All-Purpose Flour (125g)
- 3 tbsp Dark Cocoa Powder (15g—Note: 1 tbsp black cocoa and 2 tbsp regular cocoa works perfectly)
- 2 tbsp Espresso Powder (10g)
- 1/2 tsp Salt (3g)
- 1 cup Granulated Sugar (200g)
- 1/4 cup Brown Sugar (50g)
- 3 Large Eggs (150g)
- 2 tsp Vanilla Bean Paste or Extract (10ml)
Step-by-Step Instructions
1. Brown the Butter: In a saucepan over medium heat, melt the butter. Continue cooking, stirring constantly, until the milk solids turn golden brown and smell nutty. Remove from heat immediately.
2. Melt the Chocolate: Pour the hot brown butter over the semi-sweet chocolate chips in a large heat-safe bowl. Let it sit for a minute, then whisk until completely smooth and glossy.
3. Mix Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, espresso powder, and salt.
4. Combine Sugars and Eggs: In another bowl, whisk the granulated sugar, brown sugar, eggs, and vanilla bean paste until the mixture is pale and slightly frothy.
5. The Chocolate Swirl: Slowly pour the melted chocolate-butter mixture into the egg and sugar mixture. Whisk constantly until the batter is a deep, uniform chocolate color.
6. Fold in Dry Goods: Sift the dry ingredients into the wet batter. Use a spatula to gently fold everything together until no streaks of flour remain. Do not overmix.
7. Bake: Pour the batter into a parchment-lined 8×8 baking pan. Smooth the top. Bake at 350°F (175°C) for 25–30 minutes, or until the edges are set but the center remains slightly soft.
Tips for Success
• Watch the Butter: It can go from perfectly brown to burnt in seconds. Use a light-colored pan so you can see the color change.
• Vanilla Bean Paste: Using paste instead of extract provides those beautiful tiny vanilla specks and a more robust flavor.
• The Crackly Top: To achieve that iconic papery crust, ensure your eggs and sugars are whisked very well before adding the chocolate.
Storage, Freshness & Freezing
• Storage: These brownies keep beautifully at room temperature in an airtight container for up to 4 days.
• Freshness: For an extra fudgy texture, try chilling them in the fridge before serving.
• Freezing: You can freeze these for up to 3 months. Wrap them individually in plastic wrap and then place them in a freezer bag. Just thaw at room temperature when the craving hits!
