Ingredients

  • 1 cup Unsalted Butter, browned (227g)
  • 1 1/4 cup Semi-Sweet Chocolate Chips (225g)
  • 1 cup All-Purpose Flour (125g)
  • 3 tbsp Dark Cocoa Powder (15g—Note: 1 tbsp black cocoa and 2 tbsp regular cocoa works perfectly)
  • 2 tbsp Espresso Powder (10g)
  • 1/2 tsp Salt (3g)
  • 1 cup Granulated Sugar (200g)
  • 1/4 cup Brown Sugar (50g)
  • 3 Large Eggs (150g)
  • 2 tsp Vanilla Bean Paste or Extract (10ml)

Step-by-Step Instructions

1. Brown the Butter: In a saucepan over medium heat, melt the butter. Continue cooking, stirring constantly, until the milk solids turn golden brown and smell nutty. Remove from heat immediately.

2. Melt the Chocolate: Pour the hot brown butter over the semi-sweet chocolate chips in a large heat-safe bowl. Let it sit for a minute, then whisk until completely smooth and glossy.

3. Mix Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, espresso powder, and salt.

4. Combine Sugars and Eggs: In another bowl, whisk the granulated sugar, brown sugar, eggs, and vanilla bean paste until the mixture is pale and slightly frothy.

5. The Chocolate Swirl: Slowly pour the melted chocolate-butter mixture into the egg and sugar mixture. Whisk constantly until the batter is a deep, uniform chocolate color.

6. Fold in Dry Goods: Sift the dry ingredients into the wet batter. Use a spatula to gently fold everything together until no streaks of flour remain. Do not overmix.

7. Bake: Pour the batter into a parchment-lined 8×8 baking pan. Smooth the top. Bake at 350°F (175°C) for 25–30 minutes, or until the edges are set but the center remains slightly soft.

• Watch the Butter: It can go from perfectly brown to burnt in seconds. Use a light-colored pan so you can see the color change.

• Vanilla Bean Paste: Using paste instead of extract provides those beautiful tiny vanilla specks and a more robust flavor.
