Combining the rich, fudgy center of a chocolate brownie with a soft and moist cream cheese-based cookie dough, these treats are a flavor explosion. They are packed with a “trash can” mix of pretzels, potato chips, chocolate chips, and caramel bits, delivering that perfect balance of sweet, salty, and crunchy in every single bite.

These cookies aren’t just a snack; they’re an experience. The unique combination of textures—from the soft, velvety cream cheese dough to the gooey brownie center and the salty crunch of the toppings—makes them an instant viral hit. Whether you’re baking for a party or just satisfying a serious dessert craving, these showstopping cookies are guaranteed to be the star of the show.

If you love large bakery-style cookies, this brownie stuffed cookie recipe brings together everything that makes an over-the-top dessert unforgettable: a thick cream cheese cookie dough, a fudgy brownie center, and sweet-and-salty mix-ins in every bite.

These are the finished Brownie Stuffed Trash Can Cookies, loaded with pretzels, potato chips, chocolate chips, and caramel bits for a sweet, salty, crunchy bakery-style look.

Ingredients

Wet Ingredients

  • 8 oz (226g) Cream cheese, softened well
  • 1 cup (227g) Unsalted butter, softened well
  • 2 Eggs, room temperature
  • 1 1/2 cups (300g) Brown sugar
  • 1 cup (200g) Granulated sugar
  • 1 tbsp (15ml) Vanilla extract

Dry Ingredients

  • 3 3/4 cups (468g) All-purpose flour
  • 2 tbsp (16g) Cornstarch
  • 1 tsp (5g) Baking soda
  • 1 tsp (6g) Salt

The “Trash Can” Mix & Stuffing

  • 1/2 cup (85g) Semi-sweet chocolate chips
  • 1/2 cup (20g) Pretzels, slightly crushed
  • 1/2 cup (15g) Potato chips, slightly crushed
  • 1/2 cup (80g) Caramel bits
  • Brownies: Fudgy brownies, cut into small squares for stuffing.

Instructions

1. Cream the Base: In a large bowl, cream together the softened cream cheese and unsalted butter until smooth and combined.

2. Add Sugars & Aromatics: Mix in the brown sugar, granulated sugar, eggs, and vanilla extract. Beat until the mixture is light and fluffy.

3. Incorporate Dry Ingredients: Gradually add the flour, cornstarch, baking soda, and salt. Mix until just combined; do not over-mix.

4. Fold in the “Trash Can” Mix: Gently fold in the chocolate chips, crushed pretzels, crushed potato chips, and caramel bits until evenly distributed throughout the dough.

5. Stuff the Cookies: Take an approximately 4oz portion of the cookie dough and flatten it in your hand. Place a small brownie square in the center and wrap the dough around it, ensuring the brownie is completely sealed inside.

6. Top & Bake: For extra flair, press a few more pretzel pieces, chips, or caramel bits onto the top of each dough ball.

7. Bake: Place on a parchment-lined sheet and bake at 350°F (177°C) for 12–15 minutes, or until the edges are lightly golden.

8. Cool: Let the cookies cool on the baking sheet for at least 10 minutes before moving to a wire rack. This allows the brownie center to set.

Tips for Success

• Softened is Key: Ensure both your cream cheese and butter are truly at room temperature to avoid lumps in your dough.

• Don’t Over-Crush: Keep your pretzels and potato chips in slightly larger chunks so they maintain their crunch after baking.

• Seal it Tight: Make sure the cookie dough fully encloses the brownie stuffing to prevent the filling from leaking out.

• My Best Texture Tip: From experience, these cookies are at their best when you let them cool on the baking sheet before moving them, because that gives the brownie center time to settle and keeps the cookies from falling apart while still warm.

Substitutions & Variations

If you want to customize these brownie stuffed cookies, you can keep the same overall method and change the mix-ins slightly. Chopped chocolate can be used in place of chocolate chips, and extra pretzel pieces or a few more crushed potato chips can be used for even more salty crunch.

For the brownie center, use small pieces of fudgy brownie so the filling stays soft and easy to seal inside the dough. You can also keep the topping simple and just press a few visible pretzel pieces or caramel bits onto the tops before baking for the same sweet-and-salty look.

Storage & Freshness

• Room Temperature: Store in an airtight container for up to 5 days. You can also refrigerate these cookies for up to a week.

• Freezing: You can freeze the baked cookies for up to 3 months. Thaw at room temperature or warm slightly in the microwave for a “just baked” gooey center.

Frequently Asked Questions

How big should the brownie pieces be for stuffing?
Use small brownie squares that fit comfortably inside the flattened dough so you can fully seal the cookie around the center.

Why did my brownie filling leak out?
This usually happens when the dough does not fully cover the brownie piece. Make sure the edges are pinched closed before baking.

Are these cookies supposed to be soft in the middle?
Yes. The contrast between the soft cookie, gooey brownie center, and crunchy mix-ins is part of what makes these cookies stand out.

Can I make them ahead?
Yes. You can bake them in advance and store them at room temperature, refrigerate them for up to a week, or freeze the baked cookies for longer storage.
