Cosmic Brownie Cookies

If you grew up obsessed with the iconic, colorful lunchbox treats, these Cosmic Brownie Cookies are about to become your new favorite bake. This recipe takes everything you love about the original fudgy brownie—the dense texture, the rich chocolate flavor, and that signature smooth ganache—and transforms it into a thick, chewy cookie. Using a blend of traditional and black cocoa powder ensures each bite is deeply indulgent and strikingly dark, perfectly mimicking the classic brownie look.

What truly sets these cookies apart is the decadent layer of semi-sweet ganache topped with those nostalgic rainbow candy coated chips. They are substantial, soft-baked, and hold a rich fudginess that rivals any bakery-style treat. Whether you’re baking for a crowd or just craving a dose of childhood nostalgia, these cookies deliver a high-end dessert experience that is surprisingly simple to achieve at home.

I especially love how bakery-style these turn out. Chilling the dough well and baking a quick test cookie first are the two easiest ways to get that thick, fudgy Cosmic Brownie Cookie texture described here.

Why You’ll Love This Recipe

• Nostalgia in Every Bite: Captures the exact flavor profile of the classic snack cakes but with an elevated, homemade cookie texture.

• Rich Cocoa Depth: The addition of black cocoa powder provides a sophisticated, “dark” chocolate flavor and a beautiful deep color.

• The Perfect Texture: Soft, thick, and chewy cookies that stay fresh for days.

• Indulgent Topping: A silky two-ingredient ganache that adds a layer of melt-in-your-mouth luxury.

Ingredients

For the Cookies:

  • 1 cup (227g) unsalted butter, soft
  • 3/4 cup (150g) light brown sugar
  • 2/3 cup (133g) granulated sugar
  • 2 large eggs, room temp
  • 1/2 tbsp (7.5ml) vanilla extract
  • 1/4 cup (60ml) light corn syrup (not high fructose)
  • 2 1/2 cups (312g) all-purpose flour
  • 3/4 cup (75g) unsweetened cocoa powder
  • 1/4 cup (25g) black cocoa powder
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • Rainbow candy coated chips for topping (approximately 1/2 cup)

For the Ganache:

  • 1 1/2 cups (255g) semi-sweet chocolate chips
  • 1/2 cup (120ml) heavy cream

Step-by-Step Instructions

1. Cream the Base: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

2. Add Wet Ingredients: Mix in the room-temperature eggs, vanilla, and light corn syrup until fully combined.

3. Combine Dry Ingredients: Sift in the all-purpose flour, both types of cocoa powder, baking soda, and salt. Mix until no flour streaks remain.

4. Chill the Dough: Cover the bowl and chill the dough in the fridge for at least 1 hour. This is essential for preventing the cookies from spreading too much.

5. Prep and Bake: Preheat your oven to 350°F (177°C). Scoop the dough into 4oz portions and slightly flatten them into thick discs on a lined baking sheet.

6. The Test Bake: Always bake one “test cookie” first to check your oven’s calibration. Bake the full batch for approximately 11-13 minutes. Let them cool completely on the tray.

7. Make the Ganache: Combine chocolate chips and heavy cream in a microwave-safe bowl. Microwave in 30-second increments, stirring well in between, until the mixture is completely smooth and glossy.

8. Decorate: Once the cookies are cool, spread a generous spoonful of ganache over each. Immediately top with rainbow candy chips.

For the classic Cosmic Brownie Cookie finish, let the ganache set slightly before serving so each cookie keeps its glossy topping and thick bakery-style look.

Tips for Success

• Use Black Cocoa: While you can use all regular cocoa, the 1/4 cup of black cocoa is what gives these their signature “Cosmic” dark color and flavor.

• Don’t Skip the Chill: Chilling the dough for at least an hour ensures the cookies have that thick, bakery-style height rather than spreading thin.

• Room Temp Eggs: Ensure your eggs are at room temperature to help them emulsify properly into the butter and sugar mixture.

Storage and Freshness

• At Room Temperature: Store in an airtight container for up to 5 days.

• In the Fridge: If you prefer a firmer ganache, you can store these in the fridge for up to a week.

• Freezing: These cookies freeze beautifully! Freeze them on a tray first so the ganache sets, then transfer to a freezer-safe bag for up to 3 months. Thaw at room temperature before serving.

Frequently Asked Questions

Do I have to use black cocoa powder?
You can use all regular cocoa powder, but the black cocoa helps create the dark color and signature flavor that makes these feel more like classic cosmic brownies.

Why does the dough need to chill?
Chilling the dough for at least 1 hour helps prevent too much spreading and gives the cookies their thick, chewy, bakery-style texture.

How long do Cosmic Brownie Cookies stay fresh?
They keep for up to 5 days at room temperature, up to a week in the fridge, or up to 3 months in the freezer.
