Elevate your baking repertoire with these Double Chocolate Banana Pudding Cookies, a sophisticated fusion of creamy fruit notes and deep, decadent cocoa. This recipe isn’t your average cookie; it’s a carefully crafted hybrid that pairs a velvety banana-infused dough with a rich, espresso-enhanced chocolate base. The result is a substantial, gourmet treat that offers a complex balance of flavors, ensuring every bite is as indulgent as the last.
The true hallmark of these cookies lies in their unique marbling technique, which creates striking, irregular layers of dark and gold throughout each oversized portion. By stacking and hand-ripping the two distinct doughs, you achieve a beautiful, bakery-style aesthetic that highlights the contrasting textures. Topped with a generous layer of chocolate chips and baked to soft, chewy perfection, these cookies are a standout choice for anyone looking to offer a premium dessert experience.
Why You’ll Love This Recipe
• Dynamic Flavor Profile: The natural sweetness of the banana pudding dough perfectly offsets the intense, dark richness of the double chocolate base.
• Bakery-Style Presence: Weighing in at over 4 ounces each, these are impressive, thick cookies that hold their shape and stay soft for days.
• Unique Texture: The addition of banana pudding mix provides a unique, melt-in-your-mouth softness that standard recipes can’t replicate.
• Artisanal Finish: The “stack and rip” marbling method gives each cookie a one-of-a-kind look that feels professionally curated.

Ingredients
Banana Pudding Dough
- 1 cup (227g) unsalted butter, softened
- 1/2 cup (110g) light brown sugar
- 1/3 cup (67g) granulated sugar
- 1 tsp (5ml) vanilla extract
- 1/2 tsp (2.5ml) banana emulsion
- 1 large egg & 1 egg yolk
- 1 box (approx. 96g) instant banana pudding mix
- 1 3/4 cups (210g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 1/4 cups (225g) chocolate chips
Double Chocolate Dough
- 1 cup (227g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 cup (220g) light brown sugar
- 2 large eggs, room temperature
- 2 tsp (10ml) vanilla extract
- 2 cups (240g) all-purpose flour
- 1 cup (100g) unsweetened cocoa powder
- 2 tsp (10g) baking soda
- 1 tsp (6g) salt
- 1 tsp (2g) espresso powder *optional*
- 1 1/2 cups (270g) chocolate chips
Step-by-Step Instructions
1. Cream and Combine: For both doughs, cream the softened butter and sugars until light. Mix in the wet ingredients (eggs, vanilla, and emulsion for the banana dough) until smooth.
2. Mix Dry Ingredients: Sift in the dry ingredients for each respective dough. For the banana dough, add the pudding mix during this stage. Mix until just combined.
3. Fold and Chill: Gently fold the chocolate chips into each batch. Cover and chill both doughs for at least 2 hours to ensure the perfect bake.
4. Portion and Stack: Weigh out 2.25oz (64g) of each dough. Flatten them into discs and stack them on top of each other.
5. The Marble Technique: Rip the stacked dough in half and restack it. Repeat this 2 times then roll dough ball together. This creates those beautiful marbled layers without over-mixing the colors.
6. Final Prep: Flatten the balls slightly and press extra chocolate chips into the tops for a polished, professional look.
7. Bake: Place on a parchment-lined sheet and bake at 350°F (177°C) for approximately 14 minutes.
Tips for Success
• The Test Cookie: Always bake one single cookie first! This helps you check for the perfect spread and ensures your oven is at the correct temperature.
• Scale it Out: Use a kitchen scale to ensure each dough ball is exactly 2.25oz. Consistent sizing means consistent baking.
• Banana Emulsion: For the most authentic flavor, stick with banana emulsion rather than extract; it handles the heat of the oven much better.
Storage and Freshness
• Room Temperature: Keep in an airtight container for up to 5 days.
• Freezing: You can freeze the marbled dough balls for up to 3 months and bake them straight from the freezer (just add 1–2 minutes to the time).
