For the Fruity Pebble Dough:

  •  4 oz Cream Cheese, softened (113g)
  •  3/4 cup Unsalted Butter, softened (170g)
  •  1/2 cup Granulated Sugar (100g)
  •  1/2 cup Light Brown Sugar, packed (100g)
  •  1 Large Egg, room temperature
  •  1/2 tbsp Vanilla Extract (7.5 mL)
  •  2 2/3 cups All-Purpose Flour (333g)
  •  1/2 tbsp Cornstarch (4g)
  •  1 tsp Baking Soda (5g)
  •  1/2 tsp Salt (3g)
  •  3/4 cup Crushed Fruity Pebbles Cereal (21g)
  •  1 cup White Chocolate Chips (170g)

For the Banana Pudding Dough:

  •  1 cup Unsalted Butter, softened (227g)
  •  1/2 cup Light Brown Sugar, packed (100g)
  •  1/3 cup Granulated Sugar (67g)
  •  1 Large Egg, room temperature
  •  1 Large Egg Yolk, room temperature
  •  1/2 tbsp Vanilla Extract (7.5 mL)
  •  Optional: Drops of yellow food coloring
  •  1 box (3.4 oz) Instant Banana Cream Pudding Mix (96g) (Or 1 tsp banana pudding emulsion)
  •  1 3/4 cups All-Purpose Flour (218g)
  •  1 tsp Baking Soda (5g)
  •  1/2 tsp Salt (3g)
  •  1 cup White Chocolate Chips (170g)
  •  1 1/2 cups Nilla Wafer pieces (approx. 100g) (Plus more for topping)

For the Glaze & Topping:

  •  1 cup Powdered Sugar (120g)
  •  1 tbsp Crushed Fruity Pebbles Cereal (approx. 3g)
  •  1 tbsp Whole Milk (15 mL) (Add more if needed for consistency)
  •  1/4 tsp Vanilla Extract (1.25 mL)
  •  1/4 cup Crushed Cereal, for finishing

Step-by-Step Instructions

1. Make the Fruity Pebble Dough

1. In a large bowl or stand mixer, combine the softened butter, cream cheese, granulated sugar, and light brown sugar. Beat on medium-high speed until smooth and fluffy.

2. Incorporate the room-temperature egg and vanilla extract until fully combined.

3. Gently fold in the all-purpose flour, cornstarch, baking soda, and salt just until a dough forms.

4. Fold in the 3/4 cup crushed Fruity Pebbles and 1 cup white chocolate chips. Set aside.

2. Make the Banana Pudding Dough

1. In a separate bowl, combine the softened butter, light brown sugar, and granulated sugar. Beat until fluffy.

2. Add the egg, egg yolk, vanilla extract, optional yellow food coloring, and dry instant banana cream pudding mix. Mix until smooth.

3. Fold in the flour, baking soda, and salt.

4. Gently fold in the 1 cup white chocolate chips and 1 1/2 cups Nilla Wafer pieces.

3. Swirl & Assemble

1. Measure out 2.25 ounces (64g) of the Fruity Pebble dough and 2.25 ounces (64g) of the Banana Pudding dough for each cookie (total weight ~4.5 oz per cookie).

2. Flatten both portions of dough into discs and stack them on top of each other.

3. Rip the stacked dough in half and stack the two halves back on top of each other. Repeat this ripping and stacking process 2 more times to create defined, marbled layers throughout.

4. Gently roll into a flattened dough ball and top generously with extra Nilla Wafer pieces.

4. Bake

1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

2. Bake for aproximately 10-11 minutes. (Bake time will depend on your oven, so it is recommended to bake 1 test cookie first and time it to gauge how long you want to bake the rest of the batch!)

3. Remove from the oven and allow cookies to cool completely on the baking sheet before glazing.

5. Glaze & Decorate

1. In a small bowl, whisk together the powdered sugar, 1 tbsp crushed cereal, whole milk, and vanilla extract until smooth.

2. Drizzle the glaze generously over the cooled cookies, then immediately finish with extra crushed Fruity Pebbles cereal on top!

Tips for Success

 Test Bake First: Oven temperatures vary! Always bake one single test cookie first to dial in your ideal baking time for a perfectly soft center.

 Don’t Over-Marble: Rip and stack the dough only 2–3 times. Over-kneading the two doughs together will blend the colors together rather than creating gorgeous distinct swirls.

 Glaze When Cool: Make sure the cookies are completely cool before drizzling the glaze so it stays thick and glossy rather than melting off.

Storage and Freshness

 Room Temperature: Store baked cookies in an airtight container at room temperature for up to 3–4 days. Use parchment paper between layers to keep the glaze intact.

 Freezing Cookie Dough: You can freeze the assembled, unbaked dough balls on a baking sheet, then transfer them to a ziplock bag for up to 3 months. Bake directly from frozen, adding 1–2 extra minutes to the bake time.

  4. Make the Banana Pudding Dough Base: In a separate mixing bowl, combine the softened butter, light brown sugar, and granulated sugar, beating until light and fluffy.
  5. Add Wet Ingredients & Pudding Mix: Add the egg, egg yolk, vanilla extract, optional yellow food coloring, and dry instant banana cream pudding mix to the butter mixture, beating until smooth.
  6. Incorporate Dry Ingredients & Mix-Ins: Fold in the flour, baking soda, and salt, followed gently by the white chocolate chips and Nilla Wafer pieces.
  7. Portion the Dough: Portion out 2.25 ounces (64g) of the Fruity Pebble dough and 2.25 ounces (64g) of the Banana Pudding dough for each cookie.
  8. Marble the Dough: Flatten both portions of dough into discs and stack them on top of each other. Rip the stacked dough in half and stack the halves back together. Repeat this ripping and stacking process 2 more times to create defined marbled layers. Gently roll the marbled dough into a flattened dough ball and press extra Nilla Wafer pieces into the top.
  9. Bake the Cookies and Cool: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper. Bake the dough balls for 10 to 11 minutes (baking 1 test cookie first to gauge exact timing for your oven). Remove the cookies from the oven and allow them to cool completely on the baking sheet before adding the glaze.
  10. Prepare the Glaze: In a small bowl, whisk together the powdered sugar, 1 tablespoon crushed cereal, whole milk, and vanilla extract until a smooth, thick glaze forms.
  11. Glaze and Garnish: Drizzle the glaze over the cooled cookies and immediately finish with a generous sprinkle of extra crushed Fruity Pebbles cereal on top.

Flatten both doughs and stack them on top of each other. Rip in half and continue to stack on top of each other 2 more times then roll into flattened dough balls. Top with extra nilla wafer pieces then bake on 350F for 8-11 minutes. Bake time will depend on your oven so I recommend baking 1 test cookie first and timing it to gauge how long you want to bake the whole batch. Allow cookies to cool completely then combine all ingredients for glaze. Drizzle onto cookies then finish with extra crushed cereal.
