To take things completely over the top, these thick, bakery-style cookies are drizzled with smooth white chocolate and coated in a custom “pistachio crunch” dust. The secret to their incredible texture is using cold, cubed butter combined with whole eggs and extra yolks, giving you that ultra-thick, fudgy, melt-in-your-mouth center without needing to chill the dough for hours. 🛒 Ingredients 

1. Pistachio Crunch (Topping Dust)

 1/2 cup unsalted butter, divided (approx. 113g)

 1 tbsp granulated sugar, divided (approx. 12g)

 12 tbsp all-purpose flour, divided (approx. 94g)

 1 box instant vanilla pudding mix (approx. 96g)

 1 box instant pistachio pudding mix (approx. 96g)

2. Pistachio Buttercream Filling

 3/4 cup unsalted butter, softened (approx. 170g)

 2 1/2 cups powdered sugar (approx. 300g)

 Small splash of pistachio extract

 1 drop green gel food coloring

 1-2 tbsp finely chopped pistachio pieces (approx. 8-15g)

3. Cookie Wet Ingredients

 1 cup + 1 tbsp unsalted butter, cold & cubed (approx. 240g)

 1 cup of light brown sugar, packed (approximately 200 grams)

1/2 cup of granulated sugar (approximately 100 grams)

2 large eggs, at room temperature

2 large egg yolks, at room temperature

4. Cookie Dry Ingredients & Mix-ins

 4 cups all-purpose flour (approx. 480g)

 1 tbsp cornstarch (approx. 8g)

 1 tsp baking soda (approx. 6g)

 1 tsp baking powder (approx. 4g)

 1 tsp fine sea salt (approx. 6g)

 3/4 cup roasted & salted pistachios, chopped (approx. 90g)

 1 1/2 cups high-quality white chocolate chips (approx. 250g)

5. Topping

 1/2 cup melted white chocolate (approx. 85g) for drizzling

1/2 cup pistachio topping

👩‍🍳 Step-by-Step Instructions

Step 1: Make the Pistachio Crunch

1.) Grab two separate mixing bowls. In the first bowl, combine half of the butter (56.5g), half of the sugar (6g), 6 tbsp of flour (47g), and the entire box of vanilla pudding mix. Rub together with your hands until it forms a cohesive dough.

2.) In the second bowl, repeat the exact same process using the remaining crunch ingredients and the box of pistachio pudding mix.

3.) Flatten both dough portions side-by-side onto a baking sheet lined with parchment paper.

4.) Bake at 350°F (175°C) for 7 to 10 minutes. You’ll know it’s done when it no longer looks wet and starts to puff up slightly. Let it cool completely, then crumble it into a fine dust with your hands.

Step 2: Whip and Freeze the Buttercream Filling

1.) In a bowl, beat the softened butter and powdered sugar until smooth. Add a splash of pistachio extract, a drop of green food coloring, and the chopped pistachio pieces. Whip until light and fluffy.

2.) Fit a piping bag with a large round tip (or just snip the corner of a plastic bag) and pipe individual mounds of buttercream onto a parchment-lined tray. You can also spoon mounds if you don’t have piping bags. 

3.) Place the tray directly into the freezer until the buttercream portions are completely frozen solid.

Step 3: Mix the Cookie Dough

1.) In your stand mixer fitted with the paddle attachment, cream your cold, cubed butter together with the brown sugar and white sugar until light and fluffy.

2.) Add the room-temperature whole eggs, egg yolks, vanilla extract, pistachio extract, and green food coloring. Mix on medium speed until perfectly incorporated and pale green.

3.) Turn the mixer to low and fold in the flour, cornstarch, baking soda, baking powder, and salt just until a dough forms.

4.) Pour in the white chocolate chips and chopped roasted pistachios, mixing briefly until distributed.

Step 4: Stuff and Bake

1.) Immediately scoop out large dough balls weighing approximately 4.25 ounces (approx. 120g) each.

2.) Flatten a dough ball slightly in your palm, place a completely frozen buttercream dollop right in the center, and wrap the cookie dough up and around it. Roll it back into a smooth ball, ensuring the buttercream is fully sealed inside. Repeat with the remaining dough.

3.) Place the stuffed dough balls onto a baking sheet and bake at 375°F (190°C) for exactly 9 minutes. Do not overbake! They should look set on the edges but still very soft on top.

Step 5: Decorate

1.) Let the cookies cool completely on the baking sheet.

2.) Once cooled, spoon a small pool of melted white chocolate onto the center of each cookie, then immediately dip or press a generous handful of your prepared pistachio crunch dust right into the wet chocolate.

⭐ Do Not Overbake: This is crucial! Stuffed cookies are best when they are slightly underbaked. If they stay in the oven too long, the internal buttercream filling will melt down entirely and begin to seep out of your cookie base.

⭐ Use Cold Butter for Dough: Using cold, cubed butter instead of softened butter prevents these large cookies from spreading into flat puddles in the oven, giving you that iconic, thick bakery height.

⭐ The Power of Salt: Make sure to use roasted and salted pistachios. Because white chocolate and pudding mixes are naturally very sweet, the salt content from the nuts balances the flavors beautifully.

📦 Storage and Freshness

 Room Temperature: Store your cookies in an airtight container at room temperature for up to 3 days.

 Refrigeration: Because these contain a buttercream core, you can keep them in the fridge for up to 1 week. If you enjoy a firm, fudgy center, eat them cold! If you prefer them gooey, let them sit on the counter for 20 minutes before serving.

 Freezing: You can freeze the fully baked and decorated cookies for up to 2 months. Thaw at room temperature for an hour before enjoying. You can also freeze the unbaked, stuffed dough balls and bake them straight from the freezer—just add 1–2 extra minutes to the baking time!

  • 2 large eggs + 2 large egg yolks room temperature
  • 1 tsp pistachio extract + 2 tsp vanilla extract
  • 2 drops green gel food coloring
  • 4 cups all-purpose flour (480g)
  • 1 tbsp cornstarch (8g)
  • 1 tsp baking soda (6g)
  • 1 tsp baking powder (4g)
  • 1 tsp fine sea salt (6g)
  • 3/4 cup roasted & salted pistachios chopped (90g)
  • 1 1/2 cups white chocolate chips (250g)

Method
 

  1. Make the Pistachio Crunch: In two separate bowls, divide the crunch ingredients equally: mix half the butter, sugar, and flour with the vanilla pudding box in one, and the remaining half with the pistachio pudding box in the other. Press both doughs side-by-side onto a lined baking sheet and bake at 350°F (175°C) for 7–10 minutes. Let cool completely, then crumble into a fine dust.
  2. Freeze the Buttercream Filling: Beat the softened butter and powdered sugar until smooth, then mix in the pistachio extract, green food coloring, and chopped pistachios. Pipe into individual dollops on a parchment-lined tray and freeze until completely solid.
  3. Mix the Cookie Dough: Cream the cold, cubed butter with both sugars until fluffy. Add the whole eggs, egg yolks, vanilla extract, pistachio extract, and green food coloring, mixing until combined. Fold in the flour, cornstarch, baking soda, baking powder, and salt just until a dough forms. Fold in the white chocolate chips and chopped pistachios.
  4. Stuff and Bake: Divide the dough into large 4.25 oz (120g) balls. Flatten each ball slightly, place a frozen buttercream dollop in the center, and wrap the dough tightly around it to seal completely. Place on a baking sheet and bake at 375°F (190°C) for exactly 9 minutes until the edges are set but the tops remain soft.
  5. Decorate: Allow the cookies to cool completely on the baking sheet. Spoon a pool of melted white chocolate onto the center of each cookie, then immediately press a generous amount of the prepared pistachio crunch dust into the wet chocolate.
