Ingredients

For the Cookies:

  • 1 cup (227g) unsalted butter, cold and cubed
  • 1 cup (200g) light brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 large egg yolks, room temperature
  • 2 tsp (10ml) vanilla extract
  • 1 tbsp (6g) strawberry powder
  • 2-3 drops red or pink gel food coloring
  • 4 cups (500g) all-purpose flour (APF)
  • 1 tbsp (8g) cornstarch
  • 1 tsp (5g) baking powder
  • 1 tsp (6g) baking soda
  • 1 tsp (6g) salt
  • 2 cups (340g) white chocolate chips
  • 1 cup (160g) rainbow sprinkles

For the Filling:

  • 8 oz (226g) cream cheese, softened
  • 2 tbsp (28g) unsalted butter, softened
  • 1 tsp (5ml) vanilla extract
  • 2 1/2 cups (300g) powdered sugar

For the Glaze:

  • 1 1/2 – 2 cups (180-240g) powdered sugar
  • 2-3 tbsp (30-45ml) whole milk
  • 1/2 tsp (2.5ml) strawberry extract
  • 1 tsp (2g) strawberry powder
  • 1 drop red gel food coloring (or pink)

Instructions

1. Prepare the Cheesecake Filling

In a medium bowl, cream together the softened cream cheese, butter, and vanilla until smooth. Gradually add the powdered sugar and mix until fully combined and silky. Pipe or spoon about 1oz portions of filling onto a parchment-lined tray. Freeze these for at least 1-2 hours until solid.

2. Preheat Oven and Make the Cookie Dough

Preheat your oven to 375°F (190°C). Using a stand mixer or hand mixer, cream the cold, cubed butter with the brown and granulated sugars until just combined—do not over-mix. Add the eggs, yolks, vanilla, strawberry powder, and food coloring. Mix on medium-low until the color is even and the ingredients are incorporated.

3. Incorporate Dry Ingredients

In a separate bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, mixing until a soft dough forms. Fold in the white chocolate chips and rainbow sprinkles by hand or on the lowest mixer setting.

4. Stuff and Bake

Scoop about 4oz of dough and flatten it in your palm. Place a frozen cheesecake disc in the center and wrap the dough around it, ensuring it is completely sealed. Place cookies on a parchment-lined baking sheet. Bake for 9-11 minutes or until the edges are set but the centers still look slightly soft. I recommend baking 1 test cookie first, always to assess the proper bake time for your oven. 

5. Glaze and Top

Whisk the glaze ingredients together until smooth and thick enough to hold its shape. Spoon a generous amount over each cooled cookie and immediately top with extra rainbow sprinkles.

Tips for Success

• Cold Butter is Key: Using cold, cubed butter instead of softened butter helps these cookies maintain their height and “bakery-style” thickness.

• Freeze the Filling: Ensure the cream cheese discs are completely frozen before stuffing them into the dough, or they will melt into the cookie during baking.

• Avoid Over-baking: These cookies are best when they are soft and chewy. They will continue to set as they cool on the hot baking sheet.

Storage and Freshness

• Refrigeration: Store in an airtight container in the fridge for up to 5 days.

• Freezing: You can freeze the unbaked, stuffed dough balls for up to 3 months. Bake directly from frozen, adding 2-3 minutes to the baking time.
