The secret to these cookies lies in the layers of texture and the concentrated blueberry flavor. By using a combination of blueberry emulsion and crushed freeze-dried blueberries, we achieve a deep, fruity taste and a natural color without making the dough too wet. Ingredients 

For the Filling

  • 6 tbsp Butter, soft (85g)
  • 3/4 cup Dark brown sugar (150g)
  • 1 1/2 tbsp Cinnamon (12g)
  • 2/3 cup All-purpose flour (85g)

For the Topping (Streusel)

  • 1 cup All-purpose flour (125g)
  • 1/2 cup Brown sugar (100g)
  • 1 tsp Cinnamon (3g)
  • 6 tbsp Unsalted butter, melted (85g)

For the Cookies

  • 1 cup + 1 tbsp Unsalted butter (240g)
  • 1 cup Light brown sugar (200g)
  • 2/3 cup Granulated sugar (135g)
  • 2 Large eggs, room temp
  • 2 Egg yolks, room temp
  • 1 tsp Vanilla extract (5ml)
  • 1 tsp Blueberry emulsion (5ml)
  • 1-2 oz Freeze-dried blueberries, crushed (approx. 30–60g)
  • 2 1/2 cups All-purpose flour (315g)
  • 1 1/2 cup Cake flour (190g)
  • 1 tsp Cornstarch (3g)
  • 1 tsp Baking soda (6g)
  • 1 tsp Baking powder (4g)
  • 1 tsp Salt (6g)

For the Glaze

  • 1 cup powdered sugar (120g)
  • 2-3 tbsp whole milk (30-45ml)
  • 1/2 tsp blueberry emulsion (2.5 ml)

Step-by-Step Instructions

1. Prepare the Filling: In a small bowl, mix softened butter, dark brown sugar, cinnamon, and flour until a thick paste forms. Roll into small balls (about 1 teaspoon each) and set aside.

2. Make the Streusel Topping: Combine flour, brown sugar, and cinnamon. Pour in melted butter and stir with a spoon until the mixture forms coarse crumbs.

3. Cream the Butter and Sugars: In a stand mixer, cream the unsalted butter with light brown sugar and granulated sugar until light and fluffy.

4. Add Wet Ingredients: Mix in the eggs, egg yolks, vanilla, and blueberry emulsion until well combined.

5. Mix Dry Ingredients: Slowly add the all-purpose flour, cake flour, cornstarch, baking soda, baking powder, and salt. Mix until just combined.

6. Incorporate Blueberries: Fold in the crushed freeze-dried blueberries. This will turn your dough a beautiful shade of blue/purple.

7. Assemble the Cookies: Take 3.5oz of cookie dough, flatten it, and place a 1oz filling ball in the center. Wrap the dough around the filling and roll into a ball.

8. Coat with Streusel: Press the top of each cookie dough ball firmly into the streusel topping until it’s generously covered.

9. Bake: Arrange on a parchment-lined baking sheet and bake at 375°F for 10-12 minutes, or until the edges are set.

10. The “Cookie Scoot”: Immediately after removing from the oven, use a large circular cutter to “scoot” the cookies into perfect circles while they are still soft.

11. Make Glaze and Drizzle: Combine all ingredients for glaze and drizzle generously onto cookies. Allow to set for 5-10 minutes then enjoy!

Tips for Success

• Room Temperature Ingredients: Ensure your eggs and butter are at room temperature to prevent the dough from breaking or becoming lumpy.

• Don’t Overmix: Once you add the flours, mix only until the white streaks disappear to keep the cookies tender.

• The Emulsion Matters: Using a blueberry emulsion rather than an extract provides a more robust, “baked-in” flavor that doesn’t evaporate in the oven.

Storage and Freshness

• Room Temperature: Store in an airtight container for up to 5 days.

• Reheating: To get that “fresh from the oven” feel, microwave for 10 seconds to soften the cinnamon filling.

• Freezing: You can freeze the unbaked dough balls for up to 3 months. Just add 1–2 minutes to the bake time when baking from frozen. You can freeze baked cookies for up to 3 months, as well.

      Sure! I just recommend testing one cookie out with it first before trying it with a whole batch.
