  • 1/2 tbsp baking soda (9g)
  • 1/4 tsp salt (1.5g)
  • 1 box banana cream pudding mix (approx. 96g)

For the Tres Leches Milk Mixture

  • 1 can sweetened condensed milk (14oz / 396g)
  • 1 can evaporated milk (12oz / 354ml)
  • 1 cup whole milk (240ml)
  • 1/2 tsp vanilla extract (2.5ml)
  • 1/2 tsp banana emulsion (2.5ml)

For the Banana Whipped Cream

  • 3 cups heavy cream, very cold (720ml)
  • 1 cup powdered sugar (120g)
  • 1/2 tsp banana emulsion (2.5ml)
  • Yellow food coloring (Optional, for aesthetic)

For Topping

  • Nilla wafer crumbs
  • Whole Nilla wafers
  • 1 banana, fresh and sliced

Step-By-Step Instructions

1. Prep the Bananas: In a small bowl, mash your 2 large bananas with 1 tbsp of lemon juice. The lemon juice helps prevent the bananas from browning too quickly.

2. Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, vegetable oil, milk, water, brown sugar, granulated sugar, eggs, and vanilla. Whisk until the mixture is smooth and the sugars are well incorporated.

3. Incorporate Dry Ingredients: Sift in the all-purpose flour, baking soda, salt, and the dry banana cream pudding mix. Whisk gently until just combined—be careful not to overmix, or the cake will be tough.

4. Bake: Fill 5oz mini cake pans just under halfway full. Place them on a baking sheet and bake at 350°F (177°C) for approximately 17 minutes or until a toothpick comes out clean.

5. The Soak: While the cakes are warm, whisk together the condensed milk, evaporated milk, whole milk, vanilla, and banana emulsion. Poke holes all over the warm cakes and pour the milk mixture over them until they are well-saturated.

6. Chill: Place the soaked cakes in the fridge for at least 2 hours to allow the milk to fully absorb and the flavors to develop.

7. Whipped Cream & Assembly: Whip the cold heavy cream, powdered sugar, and banana emulsion (and yellow coloring) until stiff peaks form. Pipe or spread a generous layer onto each chilled cake.

8. Final Flourish: Top with Nilla wafer crumbs, a whole Nilla wafer, and a fresh banana slice right before serving.

• Don’t Overfill: These cakes rise! Filling them just under the halfway mark ensures you have enough room for the milk soak and the whipped cream topping.

• Poke Deeply: When poking holes for the Tres Leches soak, ensure you reach toward the bottom so the entire cake is infused, not just the top layer.

Storage, Freshness & Prep

• Storage: Because of the high dairy content, these cakes must be stored in the refrigerator. Keep them covered to prevent the whipped cream from absorbing other fridge odors.
