- 1/2 tbsp cake batter emulsion (7.5mL) (Note: vanilla extract can be substituted if needed, but emulsion yields the best cake-batter flavor!)
- 2 1/4 cups all-purpose flour (281g)
- 1/2 tsp baking soda (2.5g)
- 1/4 tsp salt (1.3g)
- 3/4 cup rainbow sprinkles (approx. 135g), frozen for 30 minutes before using
Instructions
Prep: Preheat your oven to 350°F (177°C). Grease a 9×13-inch baking pan and line it with parchment paper, leaving an overhang on the sides for easy removal later. Place your rainbow sprinkles in the freezer for 30 minutes to prevent color bleeding.
Make the Cheesecake Layer: In a large mixing bowl, combine the softened cream cheese and 1/2 cup of granulated sugar. Use a hand mixer or stand mixer to beat them together until completely smooth and free of lumps. Add the room-temperature eggs and vanilla extract. Continue mixing on medium-low speed just until the eggs are fully incorporated and the batter is silky and creamy. Set the bowl aside.
Make the Birthday Cake Layer: In a separate large bowl, pour in your melted unsalted butter, packed brown sugar, and 1/2 cup of granulated sugar. Beat with your mixer until well combined and slightly creamed. Add the eggs and cake batter emulsion, mixing until smooth.
