Ingredients

For the Creamy Cheesecake Layer:

  •  16 oz cream cheese, softened to room temperature (454g)
  •  1/2 cup granulated sugar (100g)
  •  2 large eggs, room temperature
  •  1/2 tbsp vanilla extract (7.5mL)

For the Birthday Cake Cookie Layer:

  •  3/4 cup unsalted butter, melted (170g)
  •  1 cup light brown sugar, packed (200g)
  •  1/2 cup granulated sugar (100g)
  •  2 large eggs, room temperature
  •  1/2 tbsp cake batter emulsion (7.5mL) (Note: vanilla extract can be substituted if needed, but emulsion yields the best cake-batter flavor!)
  •  2 1/4 cups all-purpose flour (281g)
  •  1/2 tsp baking soda (2.5g)
  •  1/4 tsp salt (1.3g)
  •  3/4 cup rainbow sprinkles (approx. 135g), frozen for 30 minutes before using

Instructions

 Prep: Preheat your oven to 350°F (177°C). Grease a 9×13-inch baking pan and line it with parchment paper, leaving an overhang on the sides for easy removal later. Place your rainbow sprinkles in the freezer for 30 minutes to prevent color bleeding.

 Make the Cheesecake Layer: In a large mixing bowl, combine the softened cream cheese and 1/2 cup of granulated sugar. Use a hand mixer or stand mixer to beat them together until completely smooth and free of lumps. Add the room-temperature eggs and vanilla extract. Continue mixing on medium-low speed just until the eggs are fully incorporated and the batter is silky and creamy. Set the bowl aside.

 Make the Birthday Cake Layer: In a separate large bowl, pour in your melted unsalted butter, packed brown sugar, and 1/2 cup of granulated sugar. Beat with your mixer until well combined and slightly creamed. Add the eggs and cake batter emulsion, mixing until smooth. Fold in the all-purpose flour, baking soda, and salt using a spatula just until a soft, cohesive dough forms. Gently fold in the frozen sprinkles. (Note: This dough will have a softer, blondie-like texture rather than a stiff rolling cookie dough.)

 Assemble: Using your hands or a spatula, press exactly half of the birthday cake cookie dough evenly into the bottom of your prepared 9×13-inch pan. Pour the entire cream cheese mixture over this base and smooth it out with an offset spatula. Finally, break up the remaining cookie dough into small pieces and sporadically place them over the top of the cheesecake layer.

 Bake: Bake at 350°F (177°C) for approximately 37 minutes. You will know they are done when the cookie edges are a beautiful golden brown and the cheesecake center has just a very slight, minimal jiggle.

 Chill: Let the bars cool completely at room temperature on a wire rack for about 1 to 2 hours. Once cool, transfer the pan to the refrigerator to chill. Chill for at least 2 hours to set, but for the absolute cleanest lines when slicing, let them chill overnight.

 Slice into Bites: Using a very sharp knife, lift the parchment paper out of the pan and slice the bars into small, bite-sized squares. For pristine layers, wipe your knife clean with a warm, damp paper towel between every single cut!

Tips for Success

 Freeze Your Sprinkles: Freezing your sprinkles for 30 minutes before folding them into the dough keeps them from melting or bleeding into your batter, keeping your cookie dough nice and bright.

 Wipe the Knife: Don’t skip cleaning your knife between cuts! Wipe it down with a warm, damp towel to ensure the white cheesecake layer doesn’t smear across the colorful cookie layers.

 Room Temperature Ingredients: Make sure your cream cheese and eggs are truly at room temperature before starting the cheesecake layer to guarantee a silky, lump-free filling.

Storage and Freshness
