For the Mini Sprinkle Cookies:

  •  1 cup unsalted butter, softened (227g)
  •  1 cup light brown sugar, packed (200g)
  •  2/3 cup granulated white sugar (133g)
  •  2 large eggs, room temperature
  •  2 tsp vanilla extract (10mL)
  •  3 1/4 cups all-purpose flour (390g)
  •  1 tsp baking soda (5g)
  •  1 tsp baking powder (5g)
  •  1 tsp cornstarch (3g)
  •  1/2 tsp salt (3g)
  •  1 cup frosted circus animal cookies, chopped (approx. 100g)
  •  1/3 cup rainbow nonpareils or sprinkles (60g)

For the Pink Velvet Buttercream:

  •  1 cup unsalted butter, softened (227g)
  •  3 1/2 cups powdered sugar (420g)
  •  2-3 tbsp heavy cream (30-45mL)
  •  1 tsp vanilla extract (5mL)
  •  1-2 drops pink gel food coloring

For the Dipping Sides:

  •  Extra rainbow sprinkles
  •  Extra chopped frosted circus animal cookies
  •  Whole frosted circus animal cookies (for garnish)

Instructions

Prep: Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.

Cream Butter & Sugars: In a large bowl (or stand mixer), beat the softened butter, light brown sugar, and granulated white sugar on medium-high speed for 3 to 4 minutes until light, fluffy, and smooth.

Add Wet Ingredients: Turn the mixer to low, add the room-temperature eggs one at a time, and pour in the vanilla extract. Beat until fully incorporated and creamy.

Whisk Dry Ingredients: In a separate medium bowl, whisk together the all-purpose flour, baking soda, baking powder, cornstarch, and salt.

Incorporate Dry Ingredients: Gradually add the dry flour mixture to your wet ingredients. Fold gently with a spatula just until the flour disappears and a soft dough forms.

Fold in Mix-ins: Gently fold in the chopped circus animal cookies and the rainbow sprinkles until they are evenly distributed throughout the cookie dough.

Portion & Shape: Scoop the dough into small, bite-sized balls (about the size of a cherry or a 1/2 tablespoon, roughly 10g each). Roll them into smooth spheres and place them 1.5 inches apart on the prepared baking sheets.

Bake: Bake at 350°F (175°C) for 6 1/2 minutes. The cookies should look light and set, but still soft and pale in the centers.

Baker’s Tip: To ensure perfect, bite-sized dipping cookies, try baking one single test cookie first! This lets you see how much they spread and calibrate your exact baking time.

Cool: Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.

Make the Buttercream: In a clean bowl, beat the softened butter on medium-high speed for 2 minutes until creamy. Gradually add the powdered sugar, heavy cream, and vanilla. Beat on medium-low speed until smooth, then turn up the speed and whip for an additional 2 minutes until ultra-fluffy. Add 1 to 2 drops of pink gel food coloring and whip until the color is vibrant and even.

Assemble & Serve: Pipe a generous swirl of pink buttercream into serving cups or onto a platter. Surround the buttercream with your freshly baked mini sprinkle cookies, extra rainbow sprinkles, and chopped circus animal cookie crumbles. Dip and enjoy!

Tips for Success

Use Gel Food Coloring: Gel color is highly concentrated and won’t thin out your buttercream like liquid food dye will.

Keep the Cookies Small: These cookies are meant for dipping, so keep them bite-sized! Larger cookies will break more easily when scooping up the thick buttercream.

Storage and Freshness
