- 1 1/2 cups (188g) All-purpose flour
- 1 cup (100g) Dark cocoa powder (Dutch-processed recommended)
- 1 1/2 tsp (9g) Salt
- 1 tsp (5g) Baking soda
- 1 tsp (5g) Baking powder
- 2 cups (340g) Semi-sweet chocolate chips
The Buckeye Topping
- Peanut Butter Filling: 1 cup creamy peanut butter, 6 tablespoons softened butter, 2 cups of powdered sugar and 1 1/2 tsp vanilla extract
- Chocolate Ganache: 1 cup chocolate chips melted with ¼ cup heavy cream.
- Flaky Sea Salt (optional garnish)
Instructions
1. Whisk the Wet: In a large bowl, whisk the melted and cooled butter with both sugars. Add the egg, yolk, and vanilla, whisking until smooth and glossy.
2. Sift the Dry: Sift together the flour, cocoa powder, salt, baking soda, and baking powder. Fold into the wet mixture until just combined.
3. Mix in Chips: Stir in the chocolate chips.
4. Bake: Scoop into large balls (approx. 3.5oz) and bake at 350°F for 10–12 minutes. Let them cool completely.
5. The Buckeye Layer: Combine butter, peanut butter, powdered sugar and vanilla until smooth. Spread equal portions onto each cookie.
