Ingredients
For the Cookies
- 1 cup (227g) Unsalted butter, softened
- 1 1/4 cups (250g) Granulated sugar
- 1/2 cup (100g) Light brown sugar, packed
- 2 Large eggs, room temperature
- 1 tsp (5ml) Pure vanilla extract
- 1 tsp (5ml) Strawberry extract
- Food coloring (AmeriColor Super Red or Electric Pink)
- 3 1/4 cups (406g) All-purpose flour
- 1/2 tbsp (4g) Cornstarch
- 1 tsp (5g) Baking powder
- 1 tsp (5g) Baking soda
- 1/2 tsp (3g) Salt
The Creamy Dipping Frosting
- 1/2 cup (113g) Unsalted butter, softened
- 4 oz (113g) Cream cheese, softened
- 2 1/2 cups (300g) Powdered sugar, sifted
- 1 tsp (5ml) Pure vanilla extract
- 1-2 tbsp (15-30ml) Heavy cream (to reach a dip-able consistency)
Strawberry Crunch Crumble
- 24 Golden Oreos
- 1 box (3 oz) Strawberry Jello mix
- 4 tbsp (56g) Unsalted butter, melted
Instructions
1. Make the Strawberry Crunch: Pulse Golden Oreos in a food processor until they are medium-fine crumbs. Stir in the strawberry jello mix. Pour the melted butter over the mixture and toss until clumpy. Spread onto a lined baking sheet and bake on 350F for 7-8 minutes. Set aside.
2. Cream the Cookie Base: Cream the softened butter and both sugars until fluffy. Add eggs, extracts, and food coloring. Mix until uniform.
3. Add Dry Ingredients: Fold in flour, cornstarch, baking powder, baking soda, and salt.
4. Bake: Scoop into approximately 1/2 tablespoon balls and bake at 350°F for about 6 minutes. Let them cool completely.
5. Make the Frosting: Beat butter and cream cheese until smooth. Add powdered sugar, vanilla, and heavy cream (one tablespoon at a time) until it’s light and soft enough for dipping.
