These Strawberry Crunch Dipping Cookies are a fun, interactive way to enjoy the classic strawberry crunch flavor. Inspired by the nostalgic ice cream bar, these soft strawberry cookies are served with a creamy dipping frosting and a signature strawberry-vanilla crunch crumble. It’s the perfect “deconstructed” dessert that has been taking social media by storm!

One bite of these cookies and you will be transported straight back to summer afternoons chasing the ice cream truck. They taste exactly like a nostalgic Strawberry Good Humor ice cream bar—that perfect balance of creamy vanilla frosting and the iconic tart-yet-sweet strawberry crumble. Between the soft, pink strawberry cookie base and the textured crunch topping, it’s a multi-sensory treat that delivers all the childhood feels in a sophisticated, bakery-style format.

Ingredients

For the Cookies

  • 1 cup (227g) Unsalted butter, softened
  • 1 1/4 cups (250g) Granulated sugar
  • 1/2 cup (100g) Light brown sugar, packed
  • 2 Large eggs, room temperature
  • 1 tsp (5ml) Pure vanilla extract
  • 1 tsp (5ml) Strawberry extract
  • Food coloring (AmeriColor Super Red or Electric Pink)
  • 3 1/4 cups (406g) All-purpose flour
  • 1/2 tbsp (4g) Cornstarch
  • 1 tsp (5g) Baking powder
  • 1 tsp (5g) Baking soda
  • 1/2 tsp (3g) Salt

The Creamy Dipping Frosting

  • 1/2 cup (113g) Unsalted butter, softened
  • 4 oz (113g) Cream cheese, softened
  • 2 1/2 cups (300g) Powdered sugar, sifted
  • 1 tsp (5ml) Pure vanilla extract
  • 1-2 tbsp (15-30ml) Heavy cream (to reach a dip-able consistency)

Strawberry Crunch Crumble

  • 24 Golden Oreos
  • 1 box (3 oz) Strawberry Jello mix
  • 4 tbsp (56g) Unsalted butter, melted

Instructions

1. Make the Strawberry Crunch: Pulse Golden Oreos in a food processor until they are medium-fine crumbs. Stir in the strawberry jello mix. Pour the melted butter over the mixture and toss until clumpy. Spread onto a lined baking sheet and bake on 350F for 7-8 minutes. Set aside.

2. Cream the Cookie Base: Cream the softened butter and both sugars until fluffy. Add eggs, extracts, and food coloring. Mix until uniform.

3. Add Dry Ingredients: Fold in flour, cornstarch, baking powder, baking soda, and salt.

4. Bake: Scoop into approximately 1/2 tablespoon balls and bake at 350°F for about 6 minutes. Let them cool completely.

5. Make the Frosting: Beat butter and cream cheese until smooth. Add powdered sugar, vanilla, and heavy cream (one tablespoon at a time) until it’s light and soft enough for dipping.

6. Assemble: Place cookies, frosting, and crunch into individual containers or a large platter for serving!

Tips & Tricks for Success

• The Crunch Texture: When crushing your Oreos, leave a few larger chunks! Having a variety of sizes (from fine dust to small pebbles) creates that authentic “Good Humor” mouthfeel.

• Vibrant Pink Color: For the most professional look, use Gel Food Coloring rather than liquid. Liquid coloring can change the moisture levels of the dough, while gel gives you that “electric pink” without the extra liquid.

• Frosting Temperature: If your dipping frosting feels too stiff after being in the fridge, don’t microwave it! Simply let it sit on the counter for 20 minutes and give it a vigorous stir with a spoon to bring back that airy, marshmallowy texture.

• The “Dip-to-Crunch” Ratio: For the ultimate bite, dip the cookie deep into the frosting so you have a thick “glue” for the strawberry crunch to stick to. Press the cookie firmly into the crunch bowl to ensure every inch of frosting is covered.

Storage & Freshness

Store the cookies at room temperature for up to 3 days. Keep the dipping frosting in the fridge for up to 1 week. If you’re making the strawberry crunch ahead of time, it stays perfectly crisp in an airtight container for up to 2 weeks. Freeze your cookies after 3 days to preserve freshness longer!
