  • 1 lb (454g) Chicken breast, diced
  • 1 large loaf Italian bread
  • 1 tsp (3g) Garlic powder
  • 1 tsp (2g) Onion powder
  • 1/2 tsp (1g) Paprika
  • 1/2 tsp (1g) Red pepper flakes
  • Salt & pepper, to taste
  • 1 cup (227g) Unsalted butter, divided
  • 2 1/2 tbsp (20g) Minced garlic, divided
  • 1 1/2 tbsp (6g) Chopped parsley, divided
  • Olive oil, for cooking
  • 2/3 cup (67g) Freshly shredded Parmesan
  • 1 cup (113g) Freshly shredded mozzarella
  • 1/2 cup (120ml) Heavy cream

Instructions 

1. Season and Cook the Chicken: Dice your chicken into bite-sized pieces. In a bowl, drizzle with olive oil and toss with the garlic powder, onion powder, paprika, salt, pepper, and a pinch of red pepper flakes. Sauté in a pan over medium-high heat until fully cooked and golden, then set aside.

2. Prepare the Garlic Butter: Slice the loaf of Italian bread in half lengthwise. In a small bowl, combine 1/2 cup of melted butter with 1 tbsp of minced garlic, 1 tbsp of fresh parsley, and the remaining red pepper flakes. Mix well and brush the mixture generously over both open sides of the bread.

3. Initial Bake: Place the bread on a baking sheet and bake at 350°F for 7–10 minutes until it just begins to turn golden.

4. Make the Alfredo Sauce: In the same pan used for the chicken, melt the remaining 1/2 cup of butter over medium-low heat. Stir in the rest of the minced garlic and simmer for 2 minutes until fragrant.

5. Thicken the Sauce: Lower the heat and stir in the heavy cream, Parmesan cheese, and the remaining parsley. Simmer gently, stirring constantly, until the sauce has thickened beautifully. Remove from heat.

6. Assemble and Final Bake: Spread about half of your Alfredo sauce over the toasted bread. Layer on the cooked chicken, top with mozzarella cheese, and then drizzle the remaining sauce over the top.

7. Melt and Broil: Return to the oven at 350°F for 5–7 minutes. For the perfect finish, switch to Broil for the last 1–2 minutes until the cheese is bubbly and has those signature brown spots.

Tips for Success

• Shred Your Own Cheese: Pre-shredded cheese is coated in potato starch to prevent clumping, which can make your sauce grainy. Shredding your own mozzarella and Parmesan ensures a much smoother melt.

• Don’t Overcook the Sauce: Alfredo sauce can separate if it gets too hot. Keep the heat low once you add the dairy and cheese.

• Bread Choice: A sturdy Italian or French loaf works best. Avoid very soft “sandwich” style loaves, as they can become soggy under the weight of the sauce.

Storage & Freshness

• Storage: This is best enjoyed fresh, but you can store leftovers in an airtight container in the fridge for up to 2 days or freeze for up to a month.

Dice chicken breast pieces. Drizzle with olive oil & mix with seasonings. Cook through over medium-high. 2.) Slice loaf in half. Chop parsley. Combine 1/2 cup melted butter, 1 tbsp minced garlic, 1 tbsp parsley and red pepper flakes. Brush onto both sides of bread. 3.) Bake bread on 350F 7-10 minutes until starting to get golden. 4.) In same pan you cooked chicken, melt 1/2 cup butter over medium low then stir in the rest of your minced garlic. Simmer 2 minutes. 5.) Over low, add heavy cream, Parmesan cheese and parsley. Simmer til thickened. Remove from heat. 6.) Spread half the sauce evenly onto bread, top with chicken, followed by mozzarella cheese then the rest of the sauce. Bake on 350F 5-7 more minutes then broil for 1-2 minutes until cheese is melty and starting to brown.
