Ingredients

The Cheesecake Filling

  • 8 oz Cream cheese, softened (226g)
  • 1/2 tsp Almond extract (2.5ml)
  • 2–3 cups Powdered sugar (240g–360g) — Start with 2 cups and taste as you go!

The Cookie Dough

  • 2 1/4 cups Unsalted butter — Should yield 415g after browning
  • 2 cups Brown sugar (400g)
  • 1 cup Granulated sugar (200g)
  • 4 Large eggs, room temp
  • 1/2 tbsp Vanilla extract (7.5ml)
  • 1/2 tbsp Vanilla bean paste (7.5ml)
  • 1/2 tsp Almond extract (2.5ml)
  • 6 cups All-purpose flour (720g)
  • 2 tsp Baking soda (12g)
  • 1 1/2 tsp Baking powder (6g)
  • 1 tsp Salt (6g)
  • 3 cups Chocolate — Half semi-sweet chips and half dark chocolate chunks
  • Flaky sea salt for topping

The Candied Almonds

  • 1 1/2 cups Sliced almonds (150g)
  • 1/2 cup Granulated sugar (100g)
  • 1/4 cup Water (60ml)
  • 1 tbsp Butter (14g)

Step-by-Step Instructions

1. Prep the Cheesecake Filling: Beat the softened cream cheese, almond extract, and powdered sugar until smooth. Pipe or spoon approximately 1oz portions onto a parchment-lined tray and freeze for at least 1 hour until completely solid.

2. Make the Candied Almonds: Combine sugar and water over medium heat. Once boiling, add almonds and stir continuously until caramelized and golden (6–8 mins). Stir in butter, spread on parchment, and bake at 350°F for 5–7 mins. Let cool and separate.

3. Brown the Butter: Melt butter in a pan until it turns golden brown and smells nutty. Let it cool slightly, ensuring you have 415g of liquid butter.

4. Mix the Dough: Cream the browned butter and sugars. Add eggs, vanilla, vanilla bean paste, and almond extract. Fold in the dry ingredients, then the chocolate and half of the candied almonds.

5. Chill: Scoop 4oz portions of dough, top with extra chocolate chunks and chill at least 4 hours or preferably overnight. Allow dough balls to come to almost room temperature before stuffing. The dough should be cold but easy to work with and stuff.

6. Assemble: Grab a dough ball, flatten it, and place a frozen cheesecake disc in the center. Seal the dough tightly around it. Top with extra candied almonds.

7. Bake: Bake cookies at 350°F (175°C) for 12–15 minutes or until edges are golden. Top with flaky sea salt.

Tips for Success

• The Test Cookie Rule: Because these cookies are massive and stuffed, always bake one single test cookie first. This helps you calibrate your oven’s “hot spots” and ensures the cheesecake stays perfectly sealed inside without leaking before you commit the whole batch to the oven.

• The Perfect Seal: When wrapping the dough, make sure there are no thin spots or cracks. A thick, even layer of dough around the frozen filling is the key to keeping that cheesecake center intact.

• Don’t Skip the Freeze: The cheesecake filling must be rock-solid before it goes into the dough to prevent it from melting too quickly during the bake.

Storage and Freshness

• Refrigeration: Because of the cream cheese center, these cookies must be stored in the refrigerator. Place them in an airtight container for up to 5–7 days.

• Freezing: You can freeze the baked cookies for up to 3 months. Thaw in the fridge overnight.

• Pro-Tip: For that fresh-baked experience, microwave a chilled cookie for 10–15 seconds to melt the chocolate and soften the center!

Allow to cool completely then separate any clumps formed and store in an airtight container or use immediately for recipe.
