Why You’ll Love This Recipe
• No Chill Time: Most thick cookies require hours in the fridge, but these go straight into the oven, making them perfect for last-minute baking.
• Authentic Pie Flavor: The addition of graham cracker crumbs into the dough gives it that signature crust flavor that pairs perfectly with the coconut.
• Professional Texture: The homemade custard is rich and velvety, far superior to any store-bought pudding mix.
• Showstopper Aesthetic: With the golden toasted coconut and peaked whipped cream, these look like they came straight from a high-end bakery.

Ingredients
For the Cookies:
- 1 1/2 cups unsalted butter, softened (340g)
- 3/4 cup granulated sugar (150g)
- 2/3 cup brown sugar (135g)
- 2 eggs, room temp
- 1 tbsp vanilla extract (15ml)
- 4 cups all-purpose flour (480g)
- 1 cup graham cracker crumbs (approx. 125g)
- 1 tbsp baking powder (12g)
- 1 tsp cornstarch (3g)
- 1 tsp salt (6g)
For the Coconut Custard:
- 3 cups whole milk (710ml)
- 1 1/4 cups granulated sugar (250g)
- 1/4 cup cornstarch (32g)
- 4 egg yolks, beaten
- 2 tsp vanilla extract (10ml)
- 1 1/2 cups sweetened coconut flakes (approx. 140g)
For the Whipped Cream:
- 1/2 cup heavy cream (120ml)
- 3/4 cup powdered sugar (90g)
- 1 tsp vanilla extract (5ml)
Instructions
1. Prepare the Coconut Custard
1. In a pot over medium-high heat, whisk together the milk, sugar, and cornstarch. Whisk continuously to ensure the sugar does not stick to the bottom.
2. Bring the mixture to a low boil, whisking for 5–7 minutes until it begins to thicken.
3. Temper the eggs: Quickly whisk about 1/2 cup of the hot milk mixture into the beaten egg yolks. This prevents the eggs from scrambling when added to the pot.
4. Pour the tempered yolks back into the pot and whisk for another 2 minutes.
5. Remove from heat and stir in the vanilla and coconut flakes.
6. Transfer the custard to a separate bowl, allow it to cool slightly, then chill in the fridge for at least 2 hours.
2. Bake the Cookies
1. Preheat your oven to 350°F (175°C).
2. Cream together the butter and sugars, then mix in the eggs and vanilla.
3. Fold in the flour, graham cracker crumbs, baking powder, cornstarch, and salt until a thick dough forms.
4. Scoop 4.5-ounce portions of dough and place them on a baking sheet. Create a pocket in the center of the dough with a small measuring cup.
5. Bake for 11 minutes. The cookies will spread slightly; immediately after removing them from the oven, use a spatula or large circular cookie cutter to “scoot” them back into a perfect circle and repeat the process of using a measuring cup to make sure there is a nice “well” in the center of the cookie for the filling to sit.
6. Allow the cookies to cool completely before topping.
3. Assemble and Garnish
1. Whip the heavy cream, powdered sugar, and vanilla until stiff peaks form.
2. Using a spoon or piping bag, fill the center of each cooled cookie with a generous amount of chilled coconut custard.
3. Top with a dollop of fresh whipped cream and a sprinkle of extra coconut flakes.
Tips for Success
• Tempering is Key: Don’t skip the tempering step for the custard; it’s the secret to a smooth, non-lumpy filling.
• The “Cookie Scoot”: Because these cookies are large (4.5 oz), they may lose their shape slightly. Shaping them with a cutter while they are still hot and soft ensures that “bakery-style” look.
• Room Temperature Ingredients: Ensure your eggs and butter are truly at room temperature to create a cohesive dough that won’t separate.
Storage and Freshness
• Fridge: Because of the custard and whipped cream, these cookies must be stored in the refrigerator in an airtight container. They will stay fresh for up to 5 days.
• Serving: For the best texture, let the cookies sit at room temperature for about 10–15 minutes before serving so the base softens slightly.
• Make Ahead: You can make the custard up to 2 days in advance. Keep it covered with plastic wrap pressed directly against the surface to prevent a skin from forming.
