Cornbread Cookies
- 3/4 cup Unsalted butter, soft (170g)
- 2/3 cup Light brown sugar (135g)
- 1 Large egg & 1 yolk, room temperature
- 1/2 tbsp Vanilla extract (7ml)
- 1 1/2 tbsp Honey (32g)
- 1 1/2 cup All-purpose flour (180g)
- 1 cup Yellow cornmeal (160g)
- 1 tbsp Cornstarch (8g)
- 1/2 tsp Baking soda (3g)
- 1/2 tsp Baking powder (2g)
- 1 tsp Salt (6g)
Whipped Honey Butter Dip
- 1 1/2 cup Unsalted butter, soft (340g)
- 1/4 cup Honey (85g)
- 3/4 cup Powdered sugar (90g)
- 1 tbsp Heavy cream (15ml)
- 1/2 tsp Cinnamon (1g)
- Pinch of salt
Instructions
1. Prep the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Cream Butter & Sugar: In a large bowl, cream together the softened butter and light brown sugar until light and fluffy.
