The Recipe

Cornbread Cookies

  • 3/4 cup Unsalted butter, soft (170g)
  • 2/3 cup Light brown sugar (135g)
  • 1 Large egg & 1 yolk, room temperature
  • 1/2 tbsp Vanilla extract (7ml)
  • 1 1/2 tbsp Honey (32g)
  • 1 1/2 cup All-purpose flour (180g)
  • 1 cup Yellow cornmeal (160g)
  • 1 tbsp Cornstarch (8g)
  • 1/2 tsp Baking soda (3g)
  • 1/2 tsp Baking powder (2g)
  • 1 tsp Salt (6g)

Whipped Honey Butter Dip

  • 1 1/2 cup Unsalted butter, soft (340g)
  • 1/4 cup Honey (85g)
  • 3/4 cup Powdered sugar (90g)
  • 1 tbsp Heavy cream (15ml)
  • 1/2 tsp Cinnamon (1g)
  • Pinch of salt

Instructions

1. Prep the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. Cream Butter & Sugar: In a large bowl, cream together the softened butter and light brown sugar until light and fluffy.

3. Add Wet Ingredients: Mix in the egg, extra yolk, vanilla, and honey until well combined.

4. Incorporate Dry Ingredients: Gently fold in the flour, cornmeal, cornstarch, baking soda, baking powder, and salt. Mix until just combined—do not overwork the dough.

5. Scoop & Bake: Using a small spoon or scoop, portion out the dough into mini cookies, approximately 1 teaspoon in size. Place them on the baking sheet, leaving space for slight spreading.

6. Bake: Bake for approximately 6 minutes. The edges should be just set and very lightly golden. Remove from the oven and let cool completely on the pan.

7. Whip the Butter: In a separate bowl, whip the softened butter for the dip until airy. Gradually add the powdered sugar, honey, heavy cream, cinnamon, and salt. Continue whipping until it reaches a frosting-like consistency.

8. Assemble: Place the mini cookies into small containers or “Dunkaroo” boxes. Add a 2 oz portion of the honey butter dip on the side.

9. The Finishing Touch: For a professional look, add one final drizzle of honey over the top of the butter dip.

• Room Temp Ingredients: Ensure your eggs and butter are at room temperature to achieve a smooth, emulsified cookie dough and a fluffy dip.

• Measure Accurately: Use the gram measurements for the best results, as cornmeal and flour can vary significantly when measured by volume.
