We start with a thick, buttery cookie base, stuff it with a luscious cinnamon-sugar filling, and pile on a crunchy pecan streusel that provides the perfect texture in every bite.

Ingredients

Cookie Base

  • 1 cup + 1 tbsp (241g) Unsalted butter, cold
  • 1 cup (200g) Brown sugar
  • 2/3 cup (133g) Granulated sugar
  • 2 Eggs, room temperature
  • 2 Egg yolks, room temperature
  • 2 tsp (10ml) Vanilla bean paste
  • 4 1/2 cups (563g) All-purpose flour
  • 1 tbsp (15g) Cornstarch
  • 1 tsp (5g) Baking soda
  • 1 tsp (5g) Baking powder
  • 1 tsp (6g) Salt

Cinnamon Filling

  • 6 tbsp (85g) Unsalted butter, softened well
  • 3/4 cup (150g) Dark brown sugar
  • 1 1/2 tbsp (12g) Cinnamon
  • 2/3 cup (83g) All-purpose flour

Pecan Crumble Topping

  • 1 cup (125g) All-purpose flour
  • 1/2 cup (100g) Brown sugar
  • 1 cup (110g) Chopped pecans
  • 1 tsp (3g) Cinnamon
  • 6 tbsp (85g) Unsalted butter, melted

Vanilla Glaze

  • 1 cup (120g) Powdered sugar
  • 2-3 tbsp (30-45ml) whole milk
  • 1/2 tsp (5ml) Vanilla bean paste or extract (optional)

Instructions

1. Prepare the Filling: In a medium bowl, combine the softened butter, dark brown sugar, cinnamon, and flour. Mix until a smooth, thick paste forms. Set aside.

2. Make the Crumble Topping: In another bowl, mix flour, brown sugar, chopped pecans, and cinnamon. Pour in the melted butter and toss with a fork until large crumbs form.

3. Cream the Cookie Dough: Using a stand mixer, cream the cold, cubed butter with the brown and granulated sugars until combined but not overly light.

4. Add Wet Ingredients: Mix in the room temperature eggs, yolks, and vanilla bean paste until just incorporated.

5. Fold in Dry: Gradually add the flour, cornstarch, baking soda, baking powder, and salt. Mix until no streaks of flour remain.

6. Stuff and Shape: Take about 4 oz (113g) of dough and flatten it. Place a generous spoonful (approximately 1oz) of the cinnamon filling in the center. Fold the dough around the filling to seal it completely and roll into a ball.

7. Top with Crumble and Chill: Press the top of each dough ball firmly into the pecan crumble so it’s heavily coated. Chill balls uncovered in the fridge for 1 hour.

8. Bake: Arrange on a parchment-lined baking sheet and bake at 375°F (190°C) for 10-12 minutes until the edges are set and slightly golden.

9. Glaze: Once the cookies have cooled, whisk the glaze ingredients together and drizzle generously over the tops.

Tips for Success

• The “Test Cookie” Rule: Before baking your entire batch, bake just one test cookie. Every oven runs slightly differently, and this allows you to check the spread and texture.

• Use Cold Butter for the Base: Using cold, cubed butter for the cookie dough helps ensure a thick, bakery-style texture that won’t spread too thin in the oven.

• Seal the Filling Carefully: Ensure the cinnamon filling is completely encased in the cookie dough. If it leaks out, it can burn on the baking sheet.

• Don’t Overbake: These cookies are best when they are slightly soft in the center. They will continue to set as they cool on the pan.

Storage & Freshness

• Room Temperature: Store these cookies in an airtight container at room temperature for up to 5 days.

• Freezing: You can freeze the baked cookies (without glaze) for up to 2 months. To serve, thaw at room temperature and add fresh glaze.

• Pro-Tip: If you like that “just baked” feel, pop a room-temperature cookie in the microwave for 10 seconds to soften the cinnamon center before eating!
