- 1 cup (227g) Unsalted butter, cold
- 1 cup (200g) Light brown sugar, packed
- 1/2 cup (100g) Granulated sugar
- 2 Large eggs, room temperature
- 2 Egg yolks, room temperature
- 1 tbsp (15ml) Vanilla extract
- 2 cups (340g) Rainbow chips
White Chocolate Ganache
- 1 cup (170g) White chocolate, chopped
- 1/3 cup (80ml) Heavy cream
- Extra Rainbow chips for garnish
Step-by-Step Instructions
1. Cream the Base: In a large bowl, cream together the cold, cubed butter with the brown and granulated sugars until the mixture is combined but still has some texture.
2. Add Wet Ingredients: Mix in the eggs, yolks and vanilla extract until just incorporated.
3. Combine Dry Ingredients: Gradually fold in the all-purpose flour, cornstarch, baking soda, and salt. Mix until no streaks of flour remain.
4. Fold in the Fun: Stir in the confetti rainbow chips until they are evenly distributed throughout the dough.
5. Scoop and Bake: Portion the dough into large balls (about 3.5 to 4 oz each). Place them on a parchment-lined baking sheet and bake at 375°F (190°C) for 10–12 minutes. The edges should be set, but the centers should still look slightly soft.
