I’ve taken everything you love about the original—the dense, chewy texture and those unmistakable rainbow chips—and elevated it into a gourmet cookie. These aren’t just chocolate cookies; they are a celebration of childhood nostalgia wrapped in a rich, white chocolate-infused dough that stays soft for days.

What sets these cookies apart is the perfect balance of sweetness and texture. The base is thick and buttery, studded with colorful confetti chips that provide a delightful crunch in every bite. Whether you’re baking for a themed party, a bake sale, or just a Tuesday afternoon craving, these cookies deliver a “wow” factor both in appearance and flavor. Ingredients

Cookie Base

  • 4 cups (500g) All-purpose flour
  • 1 tbsp (8g) Cornstarch
  • 1 tsp (5g) Baking soda
  • 1 tsp (5g) Baking powder
  • 1 tsp (6g) Salt
  • 1 cup (227g) Unsalted butter, cold
  • 1 cup (200g) Light brown sugar, packed
  • 1/2 cup (100g) Granulated sugar
  • 2 Large eggs, room temperature
  • 2 Egg yolks, room temperature
  • 1 tbsp (15ml) Vanilla extract
  • 2 cups (340g) Rainbow chips

White Chocolate Ganache

  • 1 cup (170g) White chocolate, chopped
  • 1/3 cup (80ml) Heavy cream
  • Extra Rainbow chips for garnish

Step-by-Step Instructions

1. Cream the Base: In a large bowl, cream together the cold, cubed butter with the brown and granulated sugars until the mixture is combined but still has some texture.

2. Add Wet Ingredients: Mix in the eggs, yolks and vanilla extract until just incorporated.

3. Combine Dry Ingredients: Gradually fold in the all-purpose flour, cornstarch, baking soda, and salt. Mix until no streaks of flour remain.

4. Fold in the Fun: Stir in the confetti rainbow chips until they are evenly distributed throughout the dough.

5. Scoop and Bake: Portion the dough into large balls (about 3.5 to 4 oz each). Place them on a parchment-lined baking sheet and bake at 375°F (190°C) for 10–12 minutes. The edges should be set, but the centers should still look slightly soft.

6. Cool and Glaze: Allow the cookies to cool completely. Once cooled, melt the white chocolate chips with the heavy cream to create a smooth glaze. (Heat chocolate and heavy cream in 45 second increments, stirring in between, until you reach the ideal consistency for spreading onto cookies)

7. Decorate: Spoon a generous amount of glaze onto the center of each cookie and top with additional rainbow chips for that classic “Cosmic” look.

Bakers’ Tips for Success

• The “Test Cookie” Rule: Always bake one single cookie first to check the spread. If it spreads too much, chill your dough balls for 30 minutes before baking the rest.

• Don’t Overmix: To keep the cookies soft and “brownie-like,” avoid overworking the dough once the flour is added.

• Vibrant Colors: For the best visual impact, use high-quality confetti chips that won’t bleed into the dough during the baking process.

Storage & Freshness

• Room Temperature: These stay fresh in an airtight container for up to 5 days. Freeze cookies after 5 days to prolong freshness for up to 3 months.

• Pro-Tip: If the glaze hasn’t fully set, place the cookies in the fridge for 15 minutes before stacking them with parchment paper in between.
