  •  1/2 tbsp unsalted butter (for greasing the baking pan)
  •  8 oz elbow macaroni or cavatappi (226g)
  •  3 cups chicken broth (710mL)
  •  4 oz sharp cheddar, shredded (113g)
  •  4 oz Colby Jack, shredded (113g)
  •  4 oz part-skim mozzarella, shredded (113g)
  •  4 oz American cheese, cubed or shredded (113g)
  •  2 oz cream cheese, softened (57g)
  •  1 large egg
  •  1/2 cup half & half (120mL)
  •  1/2 cup heavy cream (120mL)
  •  1/2 tsp paprika
  •  3/4 tsp garlic powder
  •  3/4 tsp onion powder
  •  1/4 tsp mustard powder
  •  Salt and black pepper to taste (go light, as the cheeses are naturally salty)

For the Crispy Breading & Frying:

  •  1 cup all-purpose flour (125g)
  •  1/4 tsp salt (1.5g)
  •  1/8 tsp black pepper
  •  1/2 tsp paprika
  •  1/4 tsp onion powder
  •  1/4 tsp garlic powder
  •  A pinch of cayenne pepper
  •  A pinch of chili powder
  •  2 large eggs, thoroughly beaten

Step-by-Step Instructions

1. Prepare and Chill the Macaroni Base

Crucial Step: Let the macaroni cool completely, then cover and place it in the refrigerator for at least 2 hours (or overnight) until it is completely firm and thoroughly chilled.

2. Shape the Balls

Once the mac and cheese is thoroughly cold and firm, use a cookie scoop or a spoon to portion the mixture into 2.25-ounce (64g) balls. Work quickly to roll them into tight, cohesive round shapes using your hands.

3. Set Up Your Dredging Station

Set out three medium bowls to create a seamless assembly line. In the first bowl, whisk together the all-purpose flour, salt, pepper, paprika, onion powder, garlic powder, cayenne, and chili powder. In the second bowl, thoroughly beat the two large eggs. In the third bowl, pour in your crunchy panko breadcrumbs.

4. Coat the Mac and Cheese Balls

Take each shaped mac and cheese ball and roll it completely in the seasoned flour mixture, shaking off any excess. Next, submerge it fully in the beaten egg wash. Finally, drop it into the panko breadcrumbs, pressing firmly so the breadcrumbs completely coat the exterior with no bare spots remaining.
