Ingredients
For the Mini Banana White Chocolate Chip Cookies:
- 3/4 cup unsalted butter, softened (170g)
- 3/4 cup light brown sugar, packed (165g)
- 1/4 cup granulated white sugar (50g)
- 2 large eggs, room temperature
- 1/2 tbsp vanilla extract (7.4mL)
- 2 1/4 cups all-purpose flour (281g)
- 1 box (3.4 oz) instant banana cream pudding mix (96g) (or 1 box instant vanilla pudding and 1 tsp banana emulsion)
- 1/2 tsp baking soda (3g)
- 1/2 tsp cornstarch (1.5g)
- 1/2 tsp salt (3g)
- 1 1/2 cups mini white chocolate chips or chunks, roughly chopped (255g)
For the Banana Buttercream Dip:
- 1 cup unsalted butter, softened (226g)
- 3 cups powdered sugar (360g)
- 1/4 tsp salt (1.5g)
- 1 tsp banana bakery emulsion (5mL)
- 2-3 tbsp heavy cream (30mL–45mL)
- 1 drop of yellow gel food coloring (optional)
For the Crunchy Topping:
- 1 1/2 cups Nilla Wafers, coarsely crushed (approx. 115g)
Step-by-Step Instructions
1. Cream the Wet Ingredients
In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, combine the softened unsalted butter, light brown sugar, and granulated sugar. Beat on medium-high speed for 2 to 3 minutes until smooth and fluffy. Add the room-temperature eggs one at a time, followed by the vanilla extract, mixing thoroughly until fully incorporated.
2. Incorporate the Dry Ingredients
In a separate bowl, whisk together the all-purpose flour, instant banana cream pudding mix, baking soda, cornstarch, and salt. Gradually add the dry mixture to the wet ingredients, mixing on low speed just until a thick dough forms. Hand-chop your white chocolate chips into irregular mini bits, then fold them gently into the dough using a spatula.
3. Shape and Bake the Mini Cookies
Preheat your oven to 350°F (177°C) and line two large baking sheets with parchment paper. Using your hands, scoop and roll the dough into small, bite-sized mini cookie balls (approximately 1 tsp in size). Because this specific dough does not spread much during baking, you can place them slightly closer together on the sheet than normal. Bake at 350°F (177°C) for 6-7 minutes. They will look soft but will firm up as they sit. Let them cool completely directly on the baking sheet.
4. Whip Up the Banana Buttercream Dip
While the cookies cool, cream 1 cup of softened butter until completely smooth. Add the powdered sugar, salt, banana emulsion, and 2 tablespoons of heavy cream. Mix on low to combine, then crank it up to high for 2 full minutes to get it ultra-fluffy. Add an extra tablespoon of heavy cream if you want a softer dipping consistency, and stir in a drop of yellow food coloring to give it that classic pudding look.
5. Assemble Your Dunkaroos
Place your coarsely crushed Nilla Wafers into small individual condiment cups. Transfer your banana buttercream into a piping bag and swirl a generous portion into separate small condiment cups. Arrange a large handful of cooled mini cookies, one frosting cup, and one crumb cup into clear plastic compartment boxes for the ultimate nostalgic presentation!
Tips for Success
Don’t Skimp on Slicing: Roughly chopping your white chocolate chips by hand instead of using standard chips ensures that every single mini cookie gets plenty of chocolate distribution without overcrowding the small shapes.
Emulsion vs. Extract: For the absolute best flavor in your frosting, stick to a bakery emulsion rather than a traditional extract. Emulsions don’t bake out or lose power, leaving your buttercream tasting exactly like rich banana pudding.
Keep Dough Close: This dough is uniquely formulated to hold its shape. Do not worry about them melting into each other; they will stay thick, soft, and perfectly rounded.
Storage and Freshness
Room Temperature: You can store the baked cookies in an airtight container at room temperature for up to 5 days to keep them beautifully soft.
Frosting and Crumb Storage: Keep your buttercream cups covered and stored in the refrigerator if not serving within 24 hours. Let it come back to room temperature before dunking so it’s perfectly soft. Keep the crushed Nilla Wafers sealed tightly so they don’t lose their crunch.
