Cookie Base

  • 1 cup Unsalted butter, soft (227g)
  • 1 1/3 cup Light brown sugar, packed (285g)
  • 1/2 cup Granulated sugar (100g)
  • 2 Eggs, room temp
  • 1 Yolk, room temp
  • 1 tbsp Vanilla extract (15ml)
  • 2 1/2 cups All-purpose flour (312g)
  • 1 cup Cocoa powder (100g)
  • 1 tsp Baking soda (5g)
  • 1/2 tsp Salt (3g)

Dubai Filling/Topping

  • 2 cups Kataifi, chopped (approx. 100g)
  • 1/2 cup Unsalted butter (113g)
  • 1 cup Pistachio cream (250g)
  • 1/2 tbsp Tahini (7ml)
  • 2/3 cup Semi-sweet chocolate, melted (115g)
  • 2 tbsp Pistachio cream (for swirling) (30g)

Instructions

1. Toast the Kataifi

Finely chop the kataifi pastry into small pieces. Melt one stick of butter in a pan over medium heat and add the chopped kataifi. Stir constantly until the pastry is deeply golden brown and very crunchy. Remove from heat and let cool slightly in a bowl.

2. Mix the Filling

Add 1 cup of pistachio cream and 1/2 tablespoon of tahini to the toasted kataifi. Stir until fully combined and the pastry is evenly coated. Set aside to firm up.

3. Prepare the Cookie Dough

Cream together the softened butter, light brown sugar, and granulated sugar until light and fluffy. Add the eggs, egg yolk, and vanilla, mixing until smooth. Sift in the flour, cocoa powder, baking soda, and salt. Mix just until no dry streaks remain—do not overmix.

4. Scoop and Bake

Scoop large 4oz dough balls, flatten them into discs and place them onto a parchment-lined baking sheet. Bake at 350°F (175°C) for 10–12 minutes. The edges should be set, but the centers should still look slightly soft. (I always recommend underbaking cookies slightly so they stay fresh for a longer span of time!)

5. Assemble and Finish

Allow the cookies to cool for 10 minutes then add a generous spoonful of the pistachio-kataifi mixture onto the center of the cookie. Melt the semi-sweet chocolate and layer it onto the kataifi then use a toothpick to swirl in the remaining pistachio cream for a marbled effect.

Tips for Success

• Don’t Burn the Kataifi: It can go from golden to burnt very quickly; keep it moving in the pan.

• Room Temp Ingredients: Ensure your eggs are at room temperature to prevent the cookie dough from breaking or curdling.

• The “Scoot” Technique: To get perfectly round cookies, place a circular glass or cutter over the hot cookies and gently scoot them in a circular motion right after they come out of the oven.

Storage and Freshness

• Room Temperature: Store in an airtight container for up to 3 days.

• Refrigeration: Because of the pistachio cream, these are best kept in the fridge if you want the topping to stay firm; they will last up to 1 week.

• Freezing: You can freeze the baked cookies (without the topping) for up to 2 months. Add the fresh kataifi topping after thawing for the best texture.
