Cookie Base
- 1 cup Unsalted butter, soft (227g)
- 1 1/3 cup Light brown sugar, packed (285g)
- 1/2 cup Granulated sugar (100g)
- 2 Eggs, room temp
- 1 Yolk, room temp
- 1 tbsp Vanilla extract (15ml)
- 2 1/2 cups All-purpose flour (312g)
- 1 cup Cocoa powder (100g)
- 1 tsp Baking soda (5g)
- 1/2 tsp Salt (3g)
Dubai Filling/Topping
- 2 cups Kataifi, chopped (approx. 100g)
- 1/2 cup Unsalted butter (113g)
- 1 cup Pistachio cream (250g)
- 1/2 tbsp Tahini (7ml)
- 2/3 cup Semi-sweet chocolate, melted (115g)
- 2 tbsp Pistachio cream (for swirling) (30g)
Instructions
1. Toast the Kataifi
Finely chop the kataifi pastry into small pieces. Melt one stick of butter in a pan over medium heat and add the chopped kataifi. Stir constantly until the pastry is deeply golden brown and very crunchy. Remove from heat and let cool slightly in a bowl.
2. Mix the Filling
Add 1 cup of pistachio cream and 1/2 tablespoon of tahini to the toasted kataifi. Stir until fully combined and the pastry is evenly coated. Set aside to firm up.
3. Prepare the Cookie Dough
Cream together the softened butter, light brown sugar, and granulated sugar until light and fluffy. Add the eggs, egg yolk, and vanilla, mixing until smooth. Sift in the flour, cocoa powder, baking soda, and salt. Mix just until no dry streaks remain—do not overmix.
