Ingredients

For the Cheesecake Filling:

  •  8 oz (226g) cream cheese, softened
  •  1 cup (120g) powdered sugar
  •  1 tsp (5ml) vanilla extract
  •  ⅓ to ½ cup (60g – 90g) red, white, and blue sprinkles

For the Cookie Dough:

  •  1 cup (227g) unsalted butter, cold and cubed
  •  1 cup (200g) light brown sugar, packed
  •  ½ cup (100g) granulated sugar
  •  2 large eggs, room temperature
  •  2 large egg yolks, room temperature
  •  1 tbsp (15ml) vanilla extract
  •  4 cups (500g) all-purpose flour
  •  1 tbsp (8g) cornstarch
  •  1 tsp (5g) baking soda
  •  1 tsp (5g) baking powder
  •  1 tsp (6g) salt
  •  1 ½ cups (255g) semi-sweet chocolate chips
  •  1 ½ cups (255g) white chocolate chips
  •  Red and Blue gel food coloring

Step-by-Step Instructions

1. Make the Cheesecake Filling

1. In a large bowl, use a hand mixer to cream together the softened cream cheese, powdered sugar, and vanilla extract until completely smooth and pillowy.

2. Carefully fold in your red, white, and blue sprinkles. (See tip below on freezing your sprinkles!)

3. Transfer the mixture to a piping bag (or use a spoon) to portion out individual heaping tablespoon mounds onto a parchment-lined baking sheet.

4. Place the baking sheet in the freezer and freeze until the cheesecake portions are completely solid. (Approximately 30 minutes but can be longer depending on your freezer temperature) 

2. Mix the Cookie Dough

1. In a stand mixer fitted with the paddle attachment, cream together the cold cubed butter, light brown sugar, and granulated sugar until light, fluffy, and well combined.

2. Add the room-temperature eggs, egg yolks, and vanilla extract. Mix until fully incorporated into the wet ingredients.

3. In a separate bowl, whisk together the all-purpose flour, cornstarch, baking soda, baking powder, and salt.

4. Gradually add the dry ingredients to the wet mixture in increments, mixing on low speed just until the dough comes together.

3. Color and Marble the Dough

1. Preheat oven to 375F then divide the cookie dough equally into two separate bowls.

2. In the first bowl, add a few drops of Super Red gel food coloring and knead the dough (wearing kitchen gloves helps!) until you achieve a vibrant red color.

3. In the second bowl, add a few drops of Navy Blue gel food coloring and mix until it reaches a deep, patriotic blue color.

4. Fold half of the semi-sweet and white chocolate chips into the red dough, and the remaining half into the blue dough.

5. Weigh out 2.5 oz (70g) of red dough and 2.5 oz (70g) of blue dough. Flatten them slightly on top of each other, then gently rip them apart and stack them back together a few times until you get a beautiful tie-dye, marbled effect. Repeat for all portions.

4. Stuff and Bake

  1. Flatten a marbled dough ball in your hand, place a frozen cheesecake dollop right in the center, and wrap the dough completely around it. Roll it into a smooth ball, ensuring no cheesecake filling is exposed.

2. Place the cookie balls onto your prepared baking sheet, leaving plenty of room for slight spreading. Press a few extra chocolate chips directly onto the tops of the dough balls for that picture-perfect bakery look.

3. Bake at 375°F (190°C) for approximately 13 minutes. The edges should be set, but the centers should still look slightly soft.

4. Allow the cookies to cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely.
