- ½ cup (100g) granulated sugar
- 2 large eggs, room temperature
- 2 large egg yolks, room temperature
- 1 tbsp (15ml) vanilla extract
- 4 cups (500g) all-purpose flour
- 1 tbsp (8g) cornstarch
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- 1 tsp (6g) salt
- 1 ½ cups (255g) semi-sweet chocolate chips
- 1 ½ cups (255g) white chocolate chips
- Red and Blue gel food coloring
Step-by-Step Instructions
1. Make the Cheesecake Filling
1. In a large bowl, use a hand mixer to cream together the softened cream cheese, powdered sugar, and vanilla extract until completely smooth and pillowy.

3. Transfer the mixture to a piping bag (or use a spoon) to portion out individual heaping tablespoon mounds onto a parchment-lined baking sheet.
4. Place the baking sheet in the freezer and freeze until the cheesecake portions are completely solid. (Approximately 30 minutes but can be longer depending on your freezer temperature)
2. Mix the Cookie Dough
1. In a stand mixer fitted with the paddle attachment, cream together the cold cubed butter, light brown sugar, and granulated sugar until light, fluffy, and well combined.
2. Add the room-temperature eggs, egg yolks, and vanilla extract. Mix until fully incorporated into the wet ingredients.
