  •  1 1/2 cups (300g) granulated sugar
  •  1/2 cup (100g) light brown sugar, packed
  •  2 large eggs, room temperature
  •  1 tsp (5ml) vanilla extract
  •  1 tsp (5ml) almond extract
  •  3 1/4 cups (406g) all-purpose flour
  •  1 tsp (3g) cornstarch
  •  1 tsp (6g) baking soda
  •  1/2 tsp (3g) salt
  •  5–6 drops red gel food coloring (such as Americolor Super Red)
  •  5–6 drops blue gel food coloring (such as Americolor Navy Blue)

For the Funfetti Sprinkle Buttercream

  •  1 cup (227g) unsalted butter, softened
  •  2 cups (240g) powdered sugar (adjusted to perfectly balance the sweetness of the added sprinkles)
  •  1 tsp (5ml) vanilla extract
  •  2 tbsp (30ml) heavy cream
  •  1/3 cup (50g) red, white, and blue jimmie sprinkles (plus extra for decorating)

Step-by-Step Instructions

Step 1: Cream the Butter and Sugars

In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, combine the softened unsalted butter, granulated sugar, and light brown sugar. Beat on medium-high speed for 2 to 3 minutes until the mixture is beautifully light, fluffy, and completely smooth.

Step 2: Incorporate the Wet Ingredients

Lower the mixer speed and add the room-temperature eggs one at a time, allowing each to fully incorporate. Pour in both the vanilla extract and almond extract. Mix until the batter is creamy and fully emulsified.

Step 3: Fold in the Dry Ingredients

In a separate bowl, whisk together the all-purpose flour, cornstarch, baking soda, and salt. Gradually add the dry ingredients to your wet base. Using a sturdy spatula, gently fold the mixture together by hand just until a cohesive, soft dough forms and no flour streaks remain. Do not overmix.

Step 4: Separate and Color the Dough

Divide your cookie dough evenly into three separate bowls.

 Bowl 1 (White): Leave exactly as is.

 Bowl 2 (Red): Add 5 to 6 drops of red gel food coloring. Use your hands to patiently fold and work the dough over and over into itself until the color is vibrant, uniform, and completely streak-free.

 Bowl 3 (Blue): Add 5 to 6 drops of blue gel food coloring and repeat the folding process until you have a deep, uniform royal blue dough.

Step 5: Scoop and Bake

Preheat your oven to 350°F (177°C) and line your baking sheets with premium parchment paper. Take small portions of the dough—roughly 1 teaspoon in size—and roll them into smooth, even little balls. Place them on the prepared baking sheets, spacing them slightly apart. Bake for approximately 6 minutes until the edges are set. Allow the mini cookies to cool completely right on the baking sheet to maintain their shape.

Step 6: Whip the Sprinkle Buttercream

    These were freakin adorable and everyone loved them. I made them all back in the beginning of June, layered them in a plastic container, which I then wrapped in plastic wrapped. They came out for 4th of July as good as if they were fresh baked and looked so adorable in the little containers with the icing. Kids and adults both loved them. Can’t wait to make them again for Halloween in black, orange and white!
