Ingredients
For the Mini Sprinkle Cookies
- 1 cup (226g) Unsalted Butter, softened to room temperature
- 1 ¼ cups (250g) Granulated Sugar
- ½ cup (110g) Light Brown Sugar, packed
- 2 Large Eggs, room temperature
- 2 tsp (10ml) Vanilla Extract
- 3 ¼ cups (390g) All-Purpose Flour
- 1 tsp Cornstarch
- 1 tsp Baking Soda
- ½ tsp Salt
- ½ cup (85g) Mini Chocolate Chips (or roughly chopped chocolate chips)
- ½ cup (80g) Red, White, and Blue Jimmie Sprinkles
For the Tri-Color Buttercream
- 1 cup (226g) Unsalted Butter, softened
- 3 cups (360g) Powdered Sugar
- 1 tsp (5ml) Vanilla Extract
- 2 tbsp (30ml) Heavy Cream
- A Pinch of Salt
- Food Coloring: High-quality Red and Blue gel food coloring
- Extra garnish: Patriotic star or strand sprinkles for the top of the frosting cups
Step-by-Step Instructions
1. Bake the Mini Cookies
1.) Preheat your oven to 350°F (175°C) and line two or three large baking sheets with parchment paper.
2.) In a large bowl or a stand mixer fitted with the paddle attachment, cream together the softened unsalted butter, granulated sugar, and light brown sugar for 2 to 3 minutes until light and fluffy.
3.) Add the room temperature eggs one at a time, followed by the vanilla extract, beating well after each addition.
4.) In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt.
5.) Gradually add the dry ingredients to the wet mixture on low speed, mixing just until a soft dough forms. Do not overmix.
6.) Fold in the mini chocolate chips and the red, white, and blue sprinkles with a spatula until evenly distributed.
7.) Roll the dough into tiny, bite-sized mini dough balls (about the size of a marble, or roughly a heaping teaspoon each). Place them on the prepared baking sheets, leaving about an inch of space between each cookie.
8.) Bake at 350°F (175°C) for 6.5 to 7 minutes until the edges are lightly set but the centers remain soft and pale. Let them cool completely on the pan.
2. Whip Up the Bomb Pop Frosting
1.) In a clean mixer bowl, beat the 1 cup of softened butter for 2 minutes until completely smooth.
2.) Add the powdered sugar one cup at a time on low speed, alternating with splashes of the heavy cream and vanilla extract. Add a pinch of salt.
3.) Once incorporated, crank the mixer up to medium-high and whip for an additional 1 to 2 minutes until the buttercream is light and fluffy.
4.) Divide the frosting equally into three separate bowls. Leave one bowl plain white. To the second bowl, add a few drops of red gel food coloring and stir until bright red. To the third bowl, add blue gel food coloring and stir until a vivid blue is achieved.
3. Assemble Containers
1.) Lay a large sheet of plastic wrap flat onto your counter.
2.) Spoon the red frosting out in a thick, straight log down the plastic wrap. Directly next to it, spoon the white frosting in an equal line, followed by the blue frosting right next to the white. You should have three long stripes of colorful frosting touching side-by-side.
3.) Carefully lift the edge of the plastic wrap and roll the frosting up into a tight cylinder or “burrito” shape, twisting the excess plastic tightly at both ends to seal it.
4.) Snip off one of the twisted plastic ends with scissors. Drop the entire plastic wrap roll, snipped-end down, into a large piping bag.
5.) Place mini plastic portion cups into your serving containers. Pipe a swirl of the tri-color frosting into each cup, creating a stunning patriotic blend. Top with extra star sprinkles.
6.) Arrange a handful of the cooled mini cookies around the frosting cup inside your containers.
Tips for Success
Test Your Baking Time: Because everyone’s oven runs slightly different, bake a small test batch of 2 or 3 mini cookies first. This lets you perfect the timing so they turn out perfectly soft instead of crunchy.
Keep the Frosting Strips Equal: When laying your buttercream down on the plastic wrap, try to make the rows equal in thickness so all three colors emerge evenly from your piping bag at the same time.
Gel Color vs Liquid: Always use gel food coloring rather than liquid drops. Gel delivers an incredibly vibrant color without thinning out the consistency of your buttercream.
Storage and Freshness
Room Temperature: Store the un-assembled mini cookies in an airtight container at room temperature for up to 5 days.
Frosting Care: If your individual Dunkaroo cups are already assembled and sealed, they can be kept at room temperature for up to 2 days. For longer storage, keep them in the refrigerator for up to 1 week—just be sure to let the frosting sit out for 20 minutes before serving so the buttercream returns to a soft, dippable texture.
