Strawberry Crunch
- 1/2 cup (112g) Unsalted butter, total, divided (1/4 cup or 56g per flavor)
- 3/4 cup (94g) All-purpose flour, total, divided (6 tbsp or 47g per flavor)
- 1 tbsp (12g) Granulated sugar, total, divided (1/2 tbsp or 6g per flavor)
- 1/2 box (approx. 85g) Strawberry Jello mix, family size
- 1/2 box (approx. 72g) Vanilla pudding mix, family size
Cookie Base
- 1 cup (227g) Unsalted butter, softened
- 1 cup (200g) Granulated sugar
- 1/2 cup (110g) Light brown sugar
- 2 large Eggs, room temperature
- 2 tsp (10ml) Vanilla extract
- 2 2/3 cups (333g) All-purpose flour
- 3/4 cup (90g) Strawberry crunch, finely crushed
- 1/2 tsp (3g) Salt
- 1 tsp (5g) Baking soda
- 1 tsp (5g) Baking powder
Strawberry Buttercream
- 3/4 cup (170g) Unsalted butter, softened
- 2 cups (240g) Powdered sugar
- 1 tsp (10ml) Strawberry extract (or more if your extract is weak, taste as you mix)
- 1 tsp (2g) Strawberry powder (or freeze-dried strawberry powder)
- A few drops Pink and/or red gel food coloring
- 2β3 tbsp (30β45ml) Heavy cream
Whipped Cream Topping
- 1/3 cup (80ml) Heavy cream, cold
- 1/8 cup (15g) Powdered sugar
- A splash Vanilla extract
Instructions
1. Make the Strawberry Crunch
- In two separate small bowls, combine the ingredients for each “crunch” flavor:
- Strawberry Flavor: 1/4 cup butter, 6 tbsp flour, 1/2 tbsp sugar, and 1/2 box strawberry Jello mix.
- Vanilla Flavor: 1/4 cup butter, 6 tbsp flour, 1/2 tbsp sugar, and 1/2 box vanilla pudding mix.
- Mix each until a moist dough forms.
- Flatten each dough onto it’s own parchment paper-lined baking sheet and bake until set.
- Once cooled, place the mixture into a food processor and pulse until you have fine, crumbs. (or you can just break it up with your hands) Set aside 3/4 cup for the cookie dough and keep the rest in a small bowl for coating the cookies later.
2. Prepare the Cookie Dough
- In a large bowl, cream together the softened butter, granulated sugar, and light brown sugar until smooth and fluffy.
- Add the eggs and vanilla extract, mixing until well combined.
- Fold in the all-purpose flour, salt, baking soda, and baking powder until just combined.
- Gently fold in the 3/4 cup of prepared strawberry crunch until evenly distributed.
3. Scoop, Coat, and Bake
- Using a large cookie scoop, portion out the dough and roll into smooth balls.
- Roll each ball into the remaining strawberry crunch until fully coated, flatten slightly into “discs”
