We’ve captured that exact flavor profile by pairing a soft, buttery graham cracker cookie base with a vibrant peach-infused cream cheese frosting and a cloud-like whipped topping. Ingredients

The Cookie Base

  • 1 cup (226g) Unsalted butter, softened well
  • 1 cup (200g) Granulated sugar
  • 1/2 cup (110g) Light brown sugar
  • 2 large (100g) Eggs, room temperature
  • 2 tsp (10ml) Vanilla extract
  • 2 2/3 cups (335g) All-purpose flour
  • 1 1/2 cups (125g) Graham crackers, finely crushed
  • 1 tsp (6g) Salt
  • 1 tsp (5g) Baking soda
  • 1 tsp (5g) Baking powder

Peach Cream Cheese Frosting

  • 8 oz (226g) Cream cheese, softened well
  • 1/2 cup (113g) Unsalted butter, softened well
  • 3 cups (360g) Powdered sugar
  • A splash Peach extract (to preference, taste as you mix)
  • Optional: A drop of orange food coloring

The Whipped Topping

  • 8 oz (226g) Cool Whip (from a container)
  • OR for homemade:
  • 2 1/2 cups (590ml) Heavy cream, cold
  • 1/3 cup (40g) Powdered sugar
  • 1/2 tsp (2.5ml) Vanilla extract
  • 1 can of peach slices

Instructions

1. Prep the Base: Pulse graham crackers in a food processor until they are fine crumbs.

2. Cream the Butter/Sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

3. Add Wet Ingredients: Mix in the room temperature eggs and vanilla extract until well combined.

4. Incorporate Dry Ingredients: Gradually add the flour, graham cracker crumbs, salt, baking soda, and baking powder. Mix until just combined—do not overmix.

5. Bake: Scoop dough into approximately 3.75oz balls, flatten into discs and place on a lined baking sheet, and bake at 350°F (175°C) for 10–12 minutes until edges are set. Allow to cool completely.

6. Make the Frosting: Beat the cream cheese and butter together until smooth. Add powdered sugar, peach extract, and food coloring (if using), and whip until fluffy.

7. Assemble: Pipe or spread a layer of peach frosting onto each cooled cookie. Top with a dollop of homemade whipped cream or Cool Whip and canned peach slice. Note: fresh peaches will not have that vibrant orange color that you want for this cookie topping specifically!

Tips for Success

• Room Temp Matters: Ensure your cream cheese and butter are truly softened; otherwise, your frosting will have tiny lumps that are impossible to beat out.

• Don’t Overbake: These cookies are best when they stay soft. Remove them from the oven just as the edges start to turn golden.

• Peach Extract: Start with a small splash. Some extracts are “super-strength” and can become overpowering quickly. I highly recommend Lorann’s peach extract that’s linked for you in my Amazon Storefront!

Storage & Freshness

Because of the cream cheese frosting and fresh fruit, these cookies must be stored in the refrigerator in an airtight container. They will stay fresh for up to 3 days. If you are making them ahead of time, wait to add the fresh peach slice until just before serving to prevent the juice from bleeding into the whipped cream.
