Ingredients

For the Cookies:

  • 1 cup (227g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1/2 cup (110g) light brown sugar, packed
  • 2 tsp vanilla extract
  • 2 eggs, room temperature
  • 2 2/3 cup (320g) All-Purpose flour
  • 3/4 cup (approx. 40g) finely crushed Trix cereal (for the dough)
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 cup (approx. 55g) crushed Trix cereal (for rolling)
  • 2/3 cup whole Trix cereal (for topping)

For the Cereal Buttercream:

  • 3/4 cup (170g) unsalted butter, softened
  • 2 cups (240g) powdered sugar
  • 1/3 cup (approx. 20g) finely crushed Trix cereal
  • 1-2 tbsp heavy cream
  • 1 tsp vanilla extract

Instructions

1. Prep the Cereal: Pulse your Trix cereal in a food processor until you have two sets: one finely ground for the dough and buttercream, and one slightly coarser for rolling.

2. Cream Butter and Sugars: In a large bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy.

3. Add Wet Ingredients: Mix in the eggs and vanilla extract until well combined.

4. Combine Dry Ingredients: Gradually fold in the flour, 3/4 cup finely crushed cereal, salt, baking soda, and baking powder until a soft dough forms.

5. Roll and Coat: Scoop approximately 3.75oz of dough and roll into balls. Roll each ball into the coarser crushed cereal until fully coated. Flatten slightly into discs.

6. Bake: Place 13 discs on a baking sheet and bake at 350°F (177°C) for 10-12 minutes until the edges are just set.

7. Make the Frosting: Beat the butter until smooth, then gradually add powdered sugar, 1/3 cup finely crushed cereal, vanilla, and heavy cream until you reach a pipeable consistency.

8. Decorate: Once cookies are completely cool, pipe a swirl of buttercream on top and garnish with whole cereal pieces.

• Room Temperature Ingredients: Ensure your eggs and butter are truly at room temperature for a smooth, cohesive dough.

• Don’t Overbake: These cookies should remain soft; they will continue to firm up on the hot baking sheet once removed from the oven.

• Fine Dusting: Sift the cereal dust used in the buttercream to ensure the frosting remains silky and doesn’t clog your piping tip.

Storage and Freshness

• Room Temperature: Store unfrosted cookies in an airtight container for up to 5 days.

• Refrigeration: Because of the buttercream, frosted cookies should be stored in the fridge for up to 3 days. Bring them to room temperature before serving for the best texture.

• Freezing: You can freeze the unbaked dough balls for up to 3 months. Bake directly from frozen, adding 1-2 minutes to the bake time.
