- 2 cups candied almonds (prepared above)
For the Stuffing & Topping
- 1/2 cup unsalted butter, soft (113g)
- 2 1/2 cups powdered sugar (312g)
- 2 tsp heavy cream (10ml)
- 1/2 tsp almond extract (2.5ml)
- Pinch of salt
- 1 box vanilla cake mix (baked and sliced into small squares)
- 3/4 cup raspberry preserves (approx. 240g)
- 2/3 cup white chocolate, melted (approx. 115g)
- 3/4 cup candied almonds (reserved for topping)
Instructions
1. Candy the Almonds: In a pan over medium heat, combine 1 cup sugar and 1/2 cup water. Once bubbling, add 3 cups sliced almonds and 2 tbsp butter. Stir constantly until the water evaporates and the sugar melts into a golden glaze. Cool on parchment and set aside.
2. Prep the Stuffing Components: Bake your vanilla cake and cut into small squares. For the buttercream, whip the softened butter, powdered sugar, heavy cream, almond extract, and salt until light and fluffy. Pipe or spoon tablespoon portions on parchment paper and freeze until completely solid.
