- 1 box (11 oz / 312g) Vanilla cake mix (made according to box’s instructions)
- (3 Eggs, 1/2 cup vegetable oil and 1 cup water for cake! This can be subbed with Nilla wafers if short on time)
- 1 cup (60g) Cereal, crushed, for cake batter
- 3–4 (approx. 450g) Ripe bananas, sliced into rounds
- 2 cups (60g) Fruity cereal, crushed
Step-by-Step Instructions
1. Crush Cereal: In a food processor (or by hand) pulverize Froot Loops and Fruity Pebbles then combine in a bowl. Set aside.
2. Make Cake: Make cake batter according to the box’s instructions (I subbed in milk for the water and folded in 1 cup of crushed cereal, half root loops and half fruity pebbles). Bake according to box’s instructions then allow to cool completely. Crumble once cooled.
3. Whisk Pudding and Chill: In a large bowl, whisk together the instant pudding mix, water, and sweetened condensed milk. Chill in the fridge until fully set, at least 1 hour.
4. Whip and Fold: In a separate chilled bowl, beat the heavy cream until stiff peaks form. Gently fold together the solidified pudding and whipped cream until smooth and airy. Fold in crushed cereal until just combined.
5. Slice Bananas and Assemble: Slice slightly under-ripe bananas (optional: toss in 1/2 tbsp lemon juice to preserve freshness longer). Layer up pudding starting with cake crumbles followed by pudding, crushed cereal and bananas. Repeat steps until serving dish is filled to the top.
