But forget the tiny plastic tubs and dry cookies—I have completely reimagined this classic treat with a sophisticated, seasonal twist. These Carrot Cake Dunkaroos feature thick, spiced carrot cake cookies that are perfectly soft and chewy, paired with cinnamon sugar walnuts and a decadent, velvet-smooth cream cheese “dunk” that tastes exactly like the frosting on a world-class carrot cake.

The magic of this recipe lies in the balance of warm spices and fresh ingredients. I’ve packed the cookie dough with real shredded carrots, cinnamon, and a touch of nutmeg to mimic the complex flavors of a traditional cake, all while maintaining that bite-sized, “dunkable” cookie structure. Whether you’re hosting a spring brunch or just looking for a fun, interactive dessert to share with friends, these Dunkaroos are a total showstopper that will have everyone reaching for “just one more” dip.

Ingredients 

The Carrot Cake Cookies

  • 2 cups (250g) All-purpose flour
  • 1/2 tsp (2.5g) Baking soda
  • 1/2 tsp (2.5g) Baking powder
  • 1 tsp (5g) Cornstarch
  • 1 tsp (3g) Cinnamon
  • 1/2 cup (113g) Unsalted butter, softened well
  • 1/2 cup (100g) Granulated sugar
  • 1/2 cup (100g) Brown sugar, packed
  • 1 Large egg, room temperature
  • 1 Large yolk, room temperature
  • 1/2 tbsp (7.5ml) Vanilla extract
  • 1/2 cup (55g) Carrots, grated and patted dry

Cream Cheese Icing (The “Dunk”)

  • 8 oz (226g) Cream cheese, softened well
  • 4 tbsp (57g) Unsalted butter, softened well
  • 1 tsp (5ml) Vanilla extract
  • 3 cups (360g) Powdered sugar, sifted
  • Pinch salt

Cinnamon Sugar Walnuts 

  • 1 cup (117g) Walnut pieces
  • 1 tbsp (14g) Unsalted butter, melted
  • 1/3 tsp (2ml) Olive oil
  • 1/2 tbsp (6g) Granulated sugar
  • 1/2 tsp (1g) Ground cinnamon
  • A small pinch of salt

Step-by-Step Instructions

1.) Prep the Carrots: Finely grate your carrots and set them aside. 

2.) Combine Dry Ingredients: Whisk together dry ingredients. Set aside.

3.) Cream the Base: Cream butter and sugars until light and fluffy.

4.) Emulsify: Add the eggs and vanilla, mixing until smooth and light followed by the shredded carrots.

5.) Incorporate Dry Ingredients and Chill: Fold in dry ingredients until just combined. Cover and chill dough in fridge for 1 hour.

6.) Shape & Bake: Portion into small, 1/2 tablespoon dough balls (for that “mini” Dunkaroo feel). Bake at 350F for about 6 minutes. Let them cool completely to ensure they are sturdy enough for dipping.

7.) Make Walnuts: Whisk together melted butter, oil, sugar, cinnamon and salt. Toss the walnuts in the butter mixture. Spread evenly onto a parchment paper lined baking sheet and bake on (350°F / 177°C) until fragrant and golden, about 12-15 minutes and allow to cool completely. 

8.) Whip the Dip: Beat the softened cream cheese, salt and butter together until airy. Gradually add powdered sugar and vanilla until you have a pipeable, fluffy consistency.

9.) Assemble Boxes: Pipe frosting into 2oz containers. Fill more 2oz container with walnuts. Place walnuts and icing into clamshell containers and fill the rest of the space with mini cookies. 

Tips for Success

• The “Dry Carrot” Secret: Always pat your shredded carrots dry. Too much moisture can cause the cookies to spread or become “cakey” rather than chewy.

• The Test Cookie: Bake one single cookie first. If it spreads too much, chill your dough for 20 minutes before baking the rest.

  • Softened, Not Melted: Ensure your butter and cream cheese are truly softened at room temperature to get that silky, cloud-like icing texture.

Storage & Freshness

• Cookies: Store in an airtight container at room temperature for up to 5 days.

• Dip: Keep the cream cheese dip in the refrigerator. It will stay fresh for up to 7 days.

• Pro-Tip: If the dip gets too firm in the fridge, let it sit on the counter for 15 minutes before serving to regain its “dunkable” texture. Whip it again with a hand mixer for 30 seconds before piping or spooning if it loses it’s “fluffiness”

    I live in Japan so baking cookies using a steam oven was a bit challenging at first. I tried making this for Mother’s day and it was a blast. Everyone loved it and kept asking for it.
