Inspired by my incredibly popular classic chocolate chip cookie recipe, this version elevates the game by adding rich chocolate chunks, crunchy chopped pecans, and a decadent core of melted caramel. They are thick, substantial, and packed with textures that make every single bite an absolute dream.

The secret to why these cookies work so beautifully is all in the balance. Turtle desserts can sometimes lean towards being overpoweringly sweet, but this cookie dough is specifically formulated to be less sweet on its own. This clever contrast perfectly balances the rich, buttery caramel and decadent chocolate chunks, ensuring you get a deeply satisfying treat that isn’t cloying.   •  1 cup brown sugar (approx. 200g)
  •  1/2 cup granulated sugar (approx. 100g)
  •  2 large eggs, room temperature
  •  2 large egg yolks, room temperature
  •  1 tbsp vanilla extract (15 ml)

Dry Ingredients

  •  2 1/2 cups all-purpose flour (approx. 312g)
  •  1 1/2 cups cake flour (approx. 180g)
  •  1 tbsp cornstarch (approx. 8g)
  •  1 tsp baking powder (approx. 5g)
  •  1 tsp baking soda (approx. 6g)
  •  1 tsp salt (approx. 6g)

Mix-Ins & Toppings

  •  1 cup chopped pecans (approx. 110g)
  •  2 cups chocolate chips (approx. 350g)
  •  1 1/2 cups chocolate chunks (approx. 260g)
  •  5 oz soft caramels (approx. 140g)
  •  3–4 tbsp heavy cream (45–60 ml)

Step-by-Step Instructions

1. Cream the Butter and Sugars: In a stand mixer fitted with the paddle attachment (or using a large bowl and a hand mixer), cream your cubed, cold unsalted butter until smooth. Add the brown sugar and granulated sugar, and mix until thoroughly combined and fluffy.

2. Add Eggs and Vanilla: Incorporate the room-temperature whole eggs, egg yolks, and vanilla extract into the butter mixture, mixing until smooth and emulsified.

3. Fold in Dry Ingredients: Combine your all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt. Add the dry ingredient mixture into the wet ingredients in small increments, folding little by little just until a cohesive dough forms.

4. Incorporate the Mix-ins: Gently fold in the chopped pecans, chocolate chips, and chocolate chunks until they are evenly distributed throughout the cookie dough.

5. Portion the Cookies: Weigh out large cookie dough balls to approximately 4.5 oz each (approx. 128g). Place them evenly spaced on your baking sheets.

6. Bake: Bake the cookies in a preheated oven at 375°F (190°C) for exactly 10 minutes.

7. Prepare the Caramel Fill: While the cookies are baking, combine the soft caramels and heavy cream in a microwave-safe bowl. Microwave in short bursts, stirring continuously, until the mixture is completely melted, smooth, and pourable. Transfer the warm caramel into a piping bag.

8. Shape and Fill: As soon as the cookies come out of the oven, use a round cookie cutter or a bowl to gently round out and fix the edges. Using your piping bag, fill the centers and tops of the warm cookies with as much gooey caramel as you desire. Allow to cool slightly before serving!

Tips for Success

 Don’t Skip the Cake Flour: While you can substitute the cake flour with an equal amount of all-purpose flour if necessary, using cake flour is highly recommended. It yields a much softer, more tender crumb that gives these cookies their signature bakery style.

 Keep Your Butter Cold: Make sure your cubed butter is cold straight from the fridge when you start creaming. This helps prevent the cookies from spreading too flat in the oven, keeping them nice and thick.

 The Cookie Scoot: Rounding out your cookies with a glass or round cutter right when they hot out of the oven pushes any stray edges back into a perfect circle, sealing the crumb for an ultra-professional look.

Storage & Freshness

 To Store: Keep your baked turtle cookies in an airtight container at room temperature for up to 4 days. Layer them with parchment paper if you are stacking them to prevent the sticky caramel from attaching to other cookies.

 To Reheat: To get that just-baked, molten caramel experience all over again, pop a cookie into the microwave for 10 to 15 seconds before eating.

 Freezing Option: You can freeze the portioned, unbaked cookie dough balls for up to 3 months. When ready to enjoy, bake them straight from the freezer at 375°F (190°C), adding an extra 1 to 2 minutes to the baking time, then top with fresh warm caramel right after baking!
