Ingredients

For the Buttercream Filling

  • 1/2 cup (113g) Unsalted butter, softened
  • 1 tsp (5ml) Vanilla extract
  • 3 tbsp (approx. 30-40g) Rainbow sprinkles
  • 2 cups (240g) Powdered sugar

For the Cookie Dough

  • 1 cup + 1 tbsp (241g) Cold unsalted butter, cubed
  • 1 cup (200g) Light brown sugar
  • 1/2 cup (100g) Granulated sugar
  • 2 Eggs, room temperature
  • 2 Egg yolks, room temperature
  • 1 tbsp (15ml) Vanilla extract
  • 4 cups (500g) All-purpose flour
  • 1 tbsp (8g) Cornstarch
  • 1 tsp (5g) Baking soda
  • 1 tsp (4g) Baking powder
  • 1 tsp (6g) Salt
  • 1 1/2 – 2 cups (255g–340g) White chocolate chips
  • 1 cup (160g) Rainbow sprinkles

For the Topping

  • 1 cup (160g) white chocolate chips
  • 1-2 drops baby blue gel food coloring
  • 14 dunkaroo cookies, optional

Instructions

1. Prepare the Filling: In a large bowl, cream together the softened butter, vanilla, and powdered sugar until smooth. Fold in the 3 tablespoons of sprinkles. Use a small cookie scoop to drop dollops of frosting onto a parchment-lined tray and freeze until solid. (NOTE: some freezers are not cold enough and will not freeze icing until solid. If yours doesn’t freeze til solid, skip the icing to prevent ruining your whole batch of cookies!)

2. Cream Butter and Sugars: In a stand mixer, beat the cold cubed butter with the brown and granulated sugars until combined but not overly aerated.

3. Add Wet Ingredients: Mix in the eggs, egg yolks, and vanilla extract until just incorporated.

4. Incorporate Dry Ingredients: Gradually add the flour, cornstarch, baking soda, baking powder, and salt. Mix on low until a dough forms.

5. Mix-ins: Fold in the white chocolate chips and 1 cup of sprinkles until evenly distributed.

6. Stuff the Cookies: Take a large portion of dough (approx. 4-6 oz for bakery-style), flatten it in your hand, and place a frozen buttercream dollop in the center. Wrap the dough around the filling, ensuring it is completely sealed.

7. Bake: Place the stuffed dough balls on a baking sheet and bake at 375°F (190°C) for 12–15 minutes, or until the edges are golden but the centers still look slightly soft.

8. Optional Topping: Melt white chocolate and mix in blue food coloring. Top cookies with chocolate and finish with a mini dunkaroo cookie. (You may need to add oil to your white chocolate to thin it out, depending on the brand of chocolate being used!)

Tips for Success

• The “Golden Rule” Test Cookie: Before baking the full tray, bake a single test cookie. This allows you to perfect the timing for your specific oven and ensure the dough is sealed tightly enough that the icing doesn’t seep out. It’s much better to adjust one cookie than to lose an entire batch!

• Keep it Cold: Using cold butter for the dough helps prevent the cookies from spreading too much, giving you that thick, viral look.

• Freeze the Filling: Ensure the buttercream dollops are completely frozen (rock solid) before stuffing; otherwise, they will melt into the dough and leak during baking.

• Don’t Overmix: Once you add the flour, mix only until the white streaks disappear. Overmixing leads to a tough, bread-like cookie rather than a tender, chewy one.

• Seal the Bottoms: When wrapping the dough around the frozen icing, pinch the bottom seam firmly. Any small gaps are where the “leakage” will happen once that butter hits the heat.

Storage and Freshness

• Fridge: Because of the buttercream filling, these stay delicious in the fridge for up to 1 week.

• Reheating: For that “just-baked” gooey center, microwave a cookie for 10-15 seconds before serving.
