For the Buttercream Filling
- 1/2 cup (113g) Unsalted butter, softened

- 2 cups (240g) Powdered sugar
For the Cookie Dough

- 1/2 cup (100g) Granulated sugar
- 2 Eggs, room temperature
- 2 Egg yolks, room temperature
- 1 tbsp (15ml) Vanilla extract
- 4 cups (500g) All-purpose flour
- 1 tbsp (8g) Cornstarch
- 1 tsp (5g) Baking soda
- 1 tsp (4g) Baking powder
- 1 tsp (6g) Salt
- 1 1/2 ā 2 cups (255gā340g) White chocolate chips
- 1 cup (160g) Rainbow sprinkles
For the Topping
- 1 cup (160g) white chocolate chips
- 1-2 drops baby blue gel food coloring
- 14 dunkaroo cookies, optional
Instructions
1. Prepare the Filling: In a large bowl, cream together the softened butter, vanilla, and powdered sugar until smooth. Fold in the 3 tablespoons of sprinkles. Use a small cookie scoop to drop dollops of frosting onto a parchment-lined tray and freeze until solid. (NOTE: some freezers are not cold enough and will not freeze icing until solid. If yours doesn’t freeze til solid, skip the icing to prevent ruining your whole batch of cookies!)
2. Cream Butter and Sugars: In a stand mixer, beat the cold cubed butter with the brown and granulated sugars until combined but not overly aerated.
3. Add Wet Ingredients: Mix in the eggs, egg yolks, and vanilla extract until just incorporated.
4. Incorporate Dry Ingredients: Gradually add the flour, cornstarch, baking soda, baking powder, and salt. Mix on low until a dough forms.
5. Mix-ins: Fold in the white chocolate chips and 1 cup of sprinkles until evenly distributed.
6. Stuff the Cookies: Take a large portion of dough (approx. 4-6 oz for bakery-style), flatten it in your hand, and place a frozen buttercream dollop in the center. Wrap the dough around the filling, ensuring it is completely sealed.
