This recipe takes the classic, ultra-moist Latin American favorite and completely transforms it with deep, aromatic espresso notes. Each single-serving cake is baked to golden perfection, deeply poked, and completely saturated with a luscious three-milk soak infused with premium coffee emulsion. The result is an incredibly rich, moist sponge that holds a pool of sweet cream in every bite without turning mushy.

To balance out the intense coffee soak, each individual cake is finished with a mountain of cloud-like coffee whipped cream piped beautifully across the top. A final dusting of dark cocoa powder and a crunchy Pirolina-style wafer cookie adds the perfect texture contrast to the silky, velvety sponge cake underneath. Baked right in convenient, individual 5-ounce aluminum pans, these single-serving treats look exactly like they came from an upscale boutique bakery or café window, making them absolutely ideal for summer parties, bake sales, or client custom orders.

Ingredients & Measurements

For the Coffee Sponge Cake:

  •  1 box yellow or white cake mix, made according to instructions or using my hack!
  •  4 tsp coffee emulsion (20ml)
  • 1 tsp espresso powder (2.5g)
  •  4 to 5 drops brown gel food coloring

 Note: Remember to add an extra egg and substitute whole milk for the water required by your specific box instructions!

For the Three-Milk (Tres Leches) Soak:

  •  12 oz evaporated milk (354mL)
  •  14 oz sweetened condensed milk (396g)
  •  1 cup whole milk (240mL)
  •  1/2 tbsp coffee emulsion (7.5ml)

For the Espresso Whipped Cream & Topping:

  •  3 cups heavy whipping cream, cold
  •  1/2 cup powdered sugar (60g)
  •  1 tsp coffee emulsion (5ml)
  •  2 to 3 drops brown gel food coloring

 For garnish: Unsweetened cocoa powder (for dusting) and Pirolina-style wafer cookies

Step-by-Step Instructions

1. Prep and Mix the Cake

Preheat your oven to 350°F (175°C). Prepare your favorite boxed cake mix according to the instructions, but apply the bakery hack: add one extra egg and substitute whole milk for the water. Stir in 4 teaspoons of coffee emulsion and 4 to 5 drops of brown gel food coloring until a smooth, light tan batter forms.

2. Bake the Individual Cakes

Line up your 5-ounce individual aluminum cake pans on a large baking sheet. Fill each pan exactly 1/3 of the way up to leave room for the soak and whipped cream. Bake at 350°F for approximately 15 minutes, or until a toothpick inserted into the center comes out with moist crumbs but no wet batter. Remove from the oven and let cool completely for 30 to 45 minutes.

3. Mix the Tres Leches Soak

While the cakes are cooling, whisk together the evaporated milk, whole milk, sweetened condensed milk, and 1/2 tablespoon of coffee emulsion in a pitcher or measuring cup until completely smooth.

4. Poke, Soak, and Chill

Using a fork, skewer, or toothpick, poke holes all over the tops of your cooled cakes. Slowly pour the coffee-infused milk mixture over each cake, allowing it to fully absorb, until all of the liquid is used up. Snap the lids onto the pans and chill them in the refrigerator for at least 1 to 2 hours.

5. Whip the Topping & Decorate

In a large cold bowl, whip 3 cups of cold heavy cream until soft peaks form. Add the powdered sugar, a few drops of brown gel food coloring, and 1 teaspoon of coffee emulsion, then continue whipping until stiff peaks form. Transfer the coffee whipped cream into a piping bag and pipe rows of aesthetic cream swirls onto each cake. Finish with a light dusting of cocoa powder and press a Pirolina wafer style cookie on top before serving cold!

Tips for Success

 The Bakery Box Hack: Don’t just follow the box instructions! Adding an extra egg and swapping the required water out for rich whole milk adds structure and fat, giving the box mix a dense, luxurious, bakery-style crumb that stands up perfectly to a heavy soak.

 Test Your Bake Time: Because 5-ounce individual pans can vary slightly in thickness, bake just one “test cake” first to pin down your oven’s exact timing before throwing the whole batch in. Look for moist crumbs on a toothpick rather than a wet batter.

 Soak in Stages: Pour your three-milk mixture slowly over the poked cakes. Let it pool, absorb for a minute, and then add more until you’ve used all of the liquid to ensure the cake is completely saturated from top to bottom.

Storage and Freshness

 Keep It Chilled: Tres Leches cake is meant to be eaten ice-cold! Keep the individual pans covered tightly with their lids and store them in the refrigerator for at least 1 to 2 hours before serving, or leave them overnight to let the coffee flavors intensify.

 Make-Ahead Capabilities: These cakes actually taste better on days 2 and 3 as the sponge absorbs the liquid. They will remain fresh and delicious in the fridge for up to 5 days.
