  •  6 tbsp unsalted butter, softened (85g)
  •  2/3 cup granulated white sugar (135g)
  •  4 large egg yolks
  •  2 tbsp fresh lemon juice (30 mL)

For the Cookie Dough:

  •  1 cup unsalted butter, softened (225g)
  •  1 cup granulated white sugar (200g)
  •  1/2 cup light brown sugar, packed (100g)
  •  2 large eggs
  •  1 tsp vanilla extract (5 mL)
  •  1 to 2 tsp mango flavoring/extract (5 to 10 mL) (optional or sub more vanilla)
  •  2 2/3 cups all-purpose flour (320g)
  •  1 1/2 cup graham crackers, finely crushed (approx. 200g)
  •  1/2 tsp salt (3g)
  •  1/2 tsp baking soda (2.5g)
  •  1 tsp baking powder (4g)
  •  Extra crushed graham crackers for rolling

For the Icing & Toppings:

  •   8 oz cream cheese, softened (226g)
  •  1/2 cup unsalted butter, softened (113g)
  •  1 1/2 cups powdered sugar (180g)
  •  1 tsp vanilla extract (5mL)
  •  Fresh mango slices for garnish
  •  A pinch of tajin for dusting, if desired 

Step-by-Step Instructions

1. Cook the Mango Curd

In a food processor, blend fresh sliced mangoes until perfectly smooth to yield 1/2 cup of puree. In a medium bowl, cream together the softened butter and granulated sugar with a mixer until fluffy. Beat in the egg yolks one at a time, followed by the mango puree and lemon juice. Pour the mixture into a saucepan over medium-low heat. Stir constantly until the mixture thickens significantly into a velvety curd. Transfer to a clean container and chill in the fridge completely.

2. Cream the Cookie Base

Preheat oven to 350°F (175°C). In a large mixing bowl, beat together 1 cup of softened butter, 1 cup of white sugar, and 1/2 cup of packed brown sugar until light and fluffy. Mix in the 2 eggs, vanilla extract, and mango flavoring until completely smooth and incorporated.

3. Mix the Dry Ingredients

In a separate bowl, whisk together the flour, salt, baking soda, baking powder, and the 14 sheets of finely crushed graham crackers. Gradually add the dry mixture to your wet ingredients, mixing gently until a soft cookie dough forms.

4. Roll and Bake

Use a large cookie scoop to portion out 12 approximately 3.3oz balls of dough. Roll each dough ball generously in a small bowl filled with extra crushed graham crackers until completely coated. Place on a baking sheet lined with parchment paper and gently flatten slightly. Bake for 11 to 13 minutes until the edges are golden. Let cool completely.

5. Assemble the Masterpiece

Fill a piping bag fitted with a large round or star tip with your cream cheese frosting. Pipe a neat border ring around the top edge of each cooled cookie, leaving an empty well in the absolute center. Spoon a generous dollop of the chilled mango curd into each center well. Top with layered fresh mango slices and finish with an optional tiny garnish dust of tajin for color.

Tips for Success

 Strain the Mango Puree: When processing your fresh mango slices in a food processor, pass the pulp through a fine-mesh sieve before cooking your curd. This removes any stringy mango fibers, leaving you with an ultra-silky, premium curd consistency.

 Thoroughly Coat Your Dough: Don’t be shy when rolling your cookie scoops through the crushed graham crackers. Give them a gentle squeeze in your hands to make sure the fine crumbs stick well; this forms that iconic cheesecake crust aesthetic after baking.
