  • ½ cup powdered sugar (approx. 60g)
  • 1 cup heavy whipping cream (240ml)
  • 1 tsp vanilla extract (5ml)

For the Chocolate Cookie Base

  • 1 cup unsalted butter, softened (227g)
  • ⅔ cup granulated sugar (135g)
  • ⅔ cup light brown sugar, packed (145g)
  • 2 large eggs
  • 1 tbsp vanilla extract (15ml)
  • 20 Oreos with filling, finely crushed (230g)
  • 2 ½ cups all-purpose flour (312g)
  • ½ cup black cocoa powder (40g) 
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cornstarch
  • 1 tsp salt

For the Topping

  • 1 bag snack-size peanut butter cups, chopped
  • ½ cup milk chocolate chips or melting wafers (approx. 90g), melted for drizzling

🥣 Step-by-Step Instructions

Step 1: Whip Up the Peanut Butter Mousse

1 In a medium bowl, combine the creamy peanut butter, softened cream cheese, softened butter, powdered sugar, and vanilla extract. Use a hand mixer to beat until smooth and completely combined.

2 In a separate chilled bowl, pour in the heavy cream and whip using a hand mixer until stiff peaks form.

3 Gently fold the whipped cream into the peanut butter mixture using a rubber spatula until smooth and uniform. Cover and place in the refrigerator to chill while you make the cookies.

Step 2: Make the Cookie Dough

1 Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper or silicone baking mats.

2 Place your 20 Oreos (creme filling included!) into a food processor. Pulse and grind until they are finely, finely crushed, resembling a dark flour.

3 In a large mixing bowl, beat together the softened butter, granulated sugar, light brown sugar, eggs, and vanilla extract until smooth and creamy.

4 Add the dry ingredients directly to the wet mixture: the all-purpose flour, black cocoa powder, baking soda, baking powder, cornstarch, salt, and your finely crushed Oreo crumbs. Fold together with a spatula just until a cohesive, dark dough forms.

Step 3: Scoop and Bake

1 Portion the dough into twelve 3.5-ounce (approx. 100g) dough balls.

2 Place the dough balls onto your baking sheets, leaving plenty of room between them, and gently press down on the tops with your hand to flatten them slightly.

3 Bake at 350°F (175°C) for approximately 12 minutes.

Step 4: Create the “Pie Crust” Pocket

1 Immediately upon pulling the cookies out of the oven while they are still hot and soft, take the bottom of a round measuring cup (like a ⅓ or ½ cup measure) and gently press down into the center of each cookie.

2 This will flatten the inside and leave a perfect indented rim, creating a pocket or “crust” to hold your pie filling. Let the cookies cool completely.

Step 5: Assemble and Decorate

1 Transfer your chilled peanut butter mousse into a piping bag fitted with a large round tip (or just snip the corner off). Pipe a generous swirl of mousse into the center pocket of each cooled cookie.

2 Melt your milk chocolate and use a spoon to artistically drizzle it back and forth over the peanut butter mousse.
