- 1 cup (200g) granulated sugar

- 1 tsp (5ml) strawberry extract
- 1/2 tbsp (7.5g) strawberry powder
- 1 drop red food coloring (or a few drops pink food coloring)
- 2 3/4 cups (344g) AP flour
- 1/2 tsp (3g) salt
- 1 tsp (5g) cornstarch
- 1/2 tbsp (7.5g) baking powder
- 1/2 cup strawberry jam (for topping)
- Fresh strawberries, sliced in half (for topping)
For the Buttercream:
- 3/4 cup (170g) unsalted butter
- 3 cups (360g) powdered sugar
- 1 1/2 tsp (7.5ml) vanilla extract
- 3-4 tbsp (45-60ml) heavy cream
- Pinch salt (optional)
Instructions
- Preheat your oven to 350°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs, one at a time, and mix until combined.
- Stir in the strawberry extract, strawberry powder, and food coloring until the mixture is a nice pink color.
- In a separate bowl, whisk together the AP flour, salt, cornstarch, and baking powder.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined. Be careful not to overmix!
- Use a cookie scoop to portion out the 3.2oz dough balls then roll them between the palms of your hands until smooth. Flatten dough balls into discs and place on your cookie sheets.
- Bake for 10-12 minutes, or until the centers are no longer wet or shiny in appearance.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- In a separate bowl, make the buttercream by beating the unsalted butter until smooth. Gradually add the powdered sugar, one cup at a time, and mix until combined.
