This recipe was inspired by a special request from a customer in New York City when I was baking custom orders, and it has quickly become a fan favorite. Whether you’re celebrating Mother’s Day or just want to elevate your weekend baking, these “big bakery style” cookies are guaranteed to impress.
Ingredients
For the Raspberry Cheesecake Filling:
- 8 oz Cream Cheese, softened (226g)
- 6 tbsp Powdered Sugar (45g)
- 1 tsp Vanilla Extract
- 3 tbsp Raspberry Preserves or Jam
For the Cookie Dough (Dry Ingredients):
- 4 cups All-Purpose Flour (500g)
- 2 tsp Cornstarch (gives that signature soft bite)
- 2 ½ tsp Baking Powder
- 2 tsp Baking Soda
- 1 1/2 tsp Salt
For the Cookie Dough (Wet Ingredients):
- 1 cup Unsalted Butter, softened (227g)
- 1 ¼ cup Light Brown Sugar, packed (250g)
- 2/3 cup Granulated Sugar (135g)
- 4 oz Cream Cheese, softened (113g)
- 2 Large Eggs, room temperature
- 2 tsp Vanilla Extract
- 1 tsp Almond Extract (optional, but highly recommended)
The Mix-Ins:
- 2.4 oz Freeze-Dried Raspberries (approx. 2 packs), semi-crushed
- 2 cups Dark Chocolate Chunks or Chips (340g)
Step-by-Step Instructions
1. Prepare the Cheesecake Filling
In a medium bowl, cream together the 8 oz cream cheese, powdered sugar, vanilla, and raspberry preserves until smooth. Using a piping bag or spoon, portion out small mounds onto a parchment-lined tray. Freeze for at least one hour until completely solid.
2. Mix the Dry Ingredients
In a separate bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt. Set this aside.
3. Cream the Base
In a large bowl, cream the softened butter, 4 oz of cream cheese, brown sugar, and granulated sugar. Adding cream cheese to the dough base provides an incredible texture! Mix until light and fluffy, then add the eggs and extracts, continuing to cream until combined.
4. Combine and Fold
Slowly fold the dry ingredients into the wet mixture. Once the dough starts to come together, fold in the dark chocolate chunks and the semi-crushed freeze-dried raspberries.
Important: Use freeze-dried raspberries rather than fresh! Fresh berries release too much moisture and will affect the bake of the cookie.
5. Stuff and Shape
Scoop about 5 oz of dough (for large cookies) and flatten it in your hand. Place a frozen cheesecake disc in the center and wrap the dough around it, ensuring it is completely sealed. This recipe makes approximately 13 jumbo cookies.
6. Bake to Perfection
Preheat your oven to 350°F (175°C). Place cookies on a baking sheet and bake for 15 minutes.
Pro Tip: I recommend slightly under-baking these! They will look soft when they come out but will firm up perfectly as they cool.
7. The Finishing Touch
Once cooled, top with a drizzle or dollop of melted dark chocolate and a fresh raspberry for a professional bakery look.
Tips for Success
• The Scale Factor: If you make smaller cookies, you will use more of the cheesecake filling. For the jumbo 5 oz versions shown here, you may have a little filling left over.
• The “Fresh Fruit” Rule: Avoid using fresh raspberries inside the dough. They break open during the mixing process, adding excess moisture that can lead to a flat or soggy cookie.
• Sealing is Key: Make sure the dough completely encases the frozen filling so the cheesecake doesn’t leak out onto the pan.
Storage & Freshness
• Refrigeration: Because of the cheesecake center, these cookies stay freshest when kept in the fridge for up to 7 days.
• Serving: They are delicious cold, but if you love a gooey center, let them sit at room temperature for 20 minutes before enjoying.
• Freezing: You can freeze the unbaked, stuffed dough balls for up to 3 months. Just add 2–3 minutes to the bake time!
