The Recipe

For the Cookies

  • 1 cup (227g) unsalted butter, room temperature
  • 1 1/4 cups (250g) granulated sugar
  • 1/4 cup (50g) light brown sugar, packed
  • 1 1/2 tbsp (9g) fresh lemon zest
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tbsp (15ml) vanilla extract
  • 2 large eggs, room temperature
  • 4 cups (500g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) baking powder
  • 1/2 tbsp (6g) cornstarch
  • 1 tsp (6g) salt
  • 2 tbsp (18g) poppyseeds

For the Lemon Glaze

  • 1 1/2 cups (180g) powdered sugar
  • 1/4 cup (60ml) fresh lemon juice
  • 2 tbsp (30ml) milk
  • Extra poppyseeds for finishing

Step-by-Step Instructions

1. Preheat and Prep Dry Ingredients: Preheat your oven to 350°F (175°C). In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, cornstarch, and salt. Set aside.

2. Massage the Zest: In a separate bowl, combine the granulated sugar and lemon zest. Use your fingers to massage the zest into the sugar until it is fragrant and looks like wet sand.

3. Cream the Base: In a large bowl, cream the room temperature butter with the lemon sugar and brown sugar for 3 minutes until light and fluffy.

4. Add Wet Ingredients: Incorporate the eggs, lemon juice, and vanilla extract, mixing until smooth and fully combined.

5. Fold it Together: Gradually fold the dry ingredients into the wet mixture until just combined, then gently fold in the poppyseeds.

6. Portion & Bake: Scoop the dough into 2.75oz (78g) balls. Place on a parchment-lined sheet and bake for approximately 10 minutes. (Bake one test cookie first to check timing!)

7. Cool & Glaze: Let cookies cool on the pan for 10 minutes. Whisk together the glaze ingredients and drizzle or spread onto the warm cookies. Finish with a sprinkle of poppyseeds.
