- 1 cup (200g) Light Brown Sugar, packed
- 2/3 cup (135g) Granulated Sugar
- 2 Large Eggs, room temperature
- 1 tsp (5ml) Vanilla Extract
- 1 tsp (5ml) Blueberry Emulsion (for that intense, professional flavor)
- 1/3 cup (15g) Freeze-Dried Blueberries, crushed/powdered
- 3 1/4 cups (406g) All-Purpose Flour
- 1/2 tbsp (7g) Cornstarch
- 1 tsp (5g) Baking Soda
- 1 tsp (5g) Baking Powder
- 1/2 tsp (3g) Salt
The Cheesecake Frosting
- 8 oz (227g) Cream Cheese, softened
- 1/2 cup (113g) Unsalted Butter, softened
- 3 to 3 1/2 cups (375g-435g) Powdered Sugar (adjust for desired thickness)
- 1 tsp (5ml) Vanilla Extract
- Pinch of Salt (optional, to balance sweetness)
For Assembly
- 1 cup (approx. 85g) Graham Cracker Crumbs
- 1/2 cup Fresh Blueberries (for garnish)
Instructions
1. Cream the Base: In a large bowl or stand mixer, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
2. Add Wet Ingredients: Mix in the eggs one at a time, followed by the vanilla, blueberry emulsion, and the crushed freeze-dried blueberries. Beat until the color is consistent and vibrant.
3. Incorporate Dry Ingredients: Gradually add the flour, cornstarch, baking soda, baking powder, and salt. Mix until just combinedāthe dough should be soft but manageable. Note: Do not add fresh or frozen berries to the dough!
4. Scoop & Bake: Scoop the dough into tiny balls between 1 tsp and 1/2 tbsp in size. Place them on a parchment-lined baking sheet. Bake at 350°F (177°C) for 6 minutes and 30 seconds. (No chilling required!)
5. Cool: Let the tiny cookies cool completely on the pan before moving them; they will firm up as they sit.
6. Make the Frosting: While cookies cool, beat the cream cheese and butter until smooth. Add powdered sugar one cup at a time until you reach a thick, pipeable consistency. Stir in the vanilla and salt.
