These Blueberry Cheesecake Dunkaroos are the ultimate nostalgic treat, featuring bite-sized blueberry cookies that are soft, chewy, and bursting with real fruit flavor. Paired with a rich, velvety cream cheese frosting and a side of graham cracker crumbs, this “dip-and-crunch” experience is as fun to eat as it is delicious.

Ingredients

The Blueberry Cookies

  • 1 cup (227g) Unsalted Butter, softened
  • 1 cup (200g) Light Brown Sugar, packed
  • 2/3 cup (135g) Granulated Sugar
  • 2 Large Eggs, room temperature
  • 1 tsp (5ml) Vanilla Extract
  • 1 tsp (5ml) Blueberry Emulsion (for that intense, professional flavor)
  • 1/3 cup (15g) Freeze-Dried Blueberries, crushed/powdered
  • 3 1/4 cups (406g) All-Purpose Flour
  • 1/2 tbsp (7g) Cornstarch
  • 1 tsp (5g) Baking Soda
  • 1 tsp (5g) Baking Powder
  • 1/2 tsp (3g) Salt

The Cheesecake Frosting

  • 8 oz (227g) Cream Cheese, softened
  • 1/2 cup (113g) Unsalted Butter, softened
  • 3 to 3 1/2 cups (375g-435g) Powdered Sugar (adjust for desired thickness)
  • 1 tsp (5ml) Vanilla Extract
  • Pinch of Salt (optional, to balance sweetness)

For Assembly

  • 1 cup (approx. 85g) Graham Cracker Crumbs
  • 1/2 cup Fresh Blueberries (for garnish)

Instructions

1. Cream the Base: In a large bowl or stand mixer, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

2. Add Wet Ingredients: Mix in the eggs one at a time, followed by the vanilla, blueberry emulsion, and the crushed freeze-dried blueberries. Beat until the color is consistent and vibrant.

3. Incorporate Dry Ingredients: Gradually add the flour, cornstarch, baking soda, baking powder, and salt. Mix until just combined—the dough should be soft but manageable. Note: Do not add fresh or frozen berries to the dough!

4. Scoop & Bake: Scoop the dough into tiny balls between 1 tsp and 1/2 tbsp in size. Place them on a parchment-lined baking sheet. Bake at 350°F (177°C) for 6 minutes and 30 seconds. (No chilling required!)

5. Cool: Let the tiny cookies cool completely on the pan before moving them; they will firm up as they sit.

6. Make the Frosting: While cookies cool, beat the cream cheese and butter until smooth. Add powdered sugar one cup at a time until you reach a thick, pipeable consistency. Stir in the vanilla and salt.

7. Assemble: In a snack box or small containers, place a large handful of cookies, a small cup of graham cracker crumbs, and a generous swirl of cheesecake frosting topped with a few fresh blueberries.

Tips for Success

• Stay Dry: Avoid using fresh or frozen blueberries in the actual dough. The moisture from the berries will make the tiny cookies spread too much and become soggy. Stick to the freeze-dried powder for that concentrated flavor and color!

• Uniform Size: Use a small measuring spoon to ensure all your cookies are the same size so they bake evenly in that short 6:30 window.

• Frosting Texture: If your frosting feels too soft, add an extra 1/2 cup of powdered sugar. You want it thick enough to hold up a “dunk” without sliding off the cookie.

Storage & Freshness

• Storage: Store the cookies in an airtight container at room temperature for up to 5 days. The frosting should be stored in the refrigerator in a sealed container for up to 1 week.
