Ingredients

For the Coconut Cream Pudding Center:

  •  1 cup Whole milk (240 ml)
  •  1 box (3.4 oz / 96 g) Instant vanilla pudding mix
  •  1 tsp Coconut extract (5 ml)
  •  1 container (8 oz / 226 g) Cool Whip (thawed)

For the Pistachio Cookie Base:

  •  4 2/3 cups All-purpose flour (560 g)
  •  1/2 tbsp Baking soda (7 g)
  •  1 tsp Salt (6 g)
  •  1 cup Unsalted butter (227 g), room temperature
  •  2/3 cup Vegetable or canola oil (160 ml)
  •  1 1/2 tsp Pistachio extract (7.5 ml)
  •  A few drops Green gel food coloring
  •  2 Large eggs (room temperature)
  •  1 cup Powdered sugar (120 g)
  •  1 cup Granulated sugar (200 g)
  •  1/4 cup Roasted, unsalted pistachios (30 g), finely chopped

For the Topping:

  •  2 tbsp Chopped pistachios (15 g)
  •  2 tbsp Thick coconut flakes (12 g)

Step-by-Step Instructions

1. Prep the Dreamy Coconut Pudding

In a large mixing bowl, vigorously whisk together the whole milk, instant vanilla pudding powder, and coconut extract until the mixture has thickened and sticks to the whisk. Gently fold in the thawed Cool Whip with a spatula until it is completely smooth and evenly incorporated. Cover the bowl tightly with plastic wrap and chill it in the refrigerator until you are ready to assemble.

2. Mix the Pistachio Cookie Dough

Preheat your oven to 350°F (175°C). In a medium bowl, whisk together the flour, baking soda, and salt; set aside. In your stand mixer or with a hand mixer and large bowl, cream the softened unsalted butter, granulated sugar, and powdered sugar together until light and fluffy. Incorporate the oil, eggs, pistachio extract, and a few drops of green gel food coloring, mixing until fully combined. Fold in the dry ingredient mixture and the finely chopped pistachios until a soft dough forms.

3. Shape and Bake

Line your baking sheets with parchment paper. Measure out large 3.25 oz (92 g) portions of dough, roll into balls, and place them on the sheets. Flatten each ball slightly into a thick disc. Take a 1/4 cup measuring cup and press it firmly into the center of each dough ball to create a deep pocket.

Bake for 8 minutes then remove sheets from oven. Use a round cutter or small bowl to gently round out the warm cookie edges, and press the 1/4 measuring cup into the centers again to redefine the pocket. Pop them back in the oven for another 3 to 4 minutes. Remove from the oven, give them one final shape-up by rounding the edges, and indent the centers one last time with the measuring cup. Allow the cookie cups to cool completely on the baking sheets.

4. Assemble Your Masterpieces

Once the bases are completely cool to the touch, retrieve your chilled filling. Using a piping bag or a spoon, fill the center pocket of each cookie with about 1/3 cup (80 ml) of the silky coconut pudding. Top generously with your extra crushed pistachios and thick coconut flakes for that picture-perfect bakery finish!
