  •  1 cup Pistachio Cream / Spread: (approx. 250g) – Look for a smooth, high-quality Italian pistachio cream (like Pisti brand).
  •  1 tbsp Tahini: (15ml) – Adds a subtle, authentic sesame depth that balances out the sweetness.

For the Mini Double Chocolate Cookies:

  •  1 cup Unsalted Butter (Softened): (226g)
  •  1 cup Granulated White Sugar: (200g)
  •  ½ cup Light Brown Sugar (Packed): (100g)
  •  2 Large Eggs (Room Temperature):
  •  1 tsp Vanilla Extract: (5ml)
  •  ½ cup Cocoa Powder: (50g) – Sifted for a smooth dough.
  •  1 tsp Baking Soda: (5g)
  •  1 tsp Cornstarch: (3g) – The secret to keeping mini cookies extra soft!
  •  ½ tsp Salt: (3g)
  •  2 cups All-Purpose Flour: (240g)
  •  1 ½ cups Mini Chocolate Chips: (270g) – Mini chips work best so they don’t overwhelm the small cookie shapes.

Step-by-Step Instructions

1. Make the Crunchy Pistachio Filling

1. Prep the Kataifi: Remove the kataifi dough from its packaging. Using a sharp knife on a cutting board, finely chop the shredded dough into tiny pieces. Work your fingers through it to separate the strands so it doesn’t clump up.

2. Toast it Gold: Melt the ½ cup (113g) of butter in a large skillet or pan over medium heat. Add the chopped kataifi and stir constantly. Cook for about 8 minutes, or until the pastry is completely golden brown and incredibly crispy.

3. Cool & Mix: Transfer the toasted pastry to a mixing bowl and let it cool completely for about 20 minutes. Once cooled, pour in 1 cup of pistachio cream and 1 tablespoon of tahini. Mix thoroughly until the crunch is evenly coated.

4. Set to Firm: If your mixture feels a bit loose or runny, don’t worry! Leave it at room temperature to firm up. If it’s still too loose, pop it into the fridge for about 10 minutes to stiffen into a scoopable dip consistency.

2. Mix and Bake the Mini Cookies

1. Cream the Base: In a large bowl or stand mixer, cream together the softened butter, white sugar, and light brown sugar until the mixture is light, fluffy, and smooth.

2. Add Wet Ingredients: Beat in the room temperature eggs one at a time, followed by the vanilla extract and cocoa powder, mixing until completely smooth and uniform.

3. Fold in Dry Ingredients: Add the baking soda, cornstarch, salt, and all-purpose flour. Mix on low just until the flour disappears. Drop in the mini chocolate chips (and chopped pistachios if you want extra nuttiness in the dough) and fold them in with a spatula.

4. Chill the Dough: For the best shape and texture, leave the dough to chill uncovered in the fridge for 30 minutes to 1 hour.

5. Roll & Bake: Preheat your oven to 350°F (177°C). Line a baking sheet with parchment paper. Roll the dough into tiny, bite-sized balls—roughly 1 teaspoon of dough per ball. Space them out evenly on your sheet.

6. The Bake Time: Bake at 350°F (177°C) for about 6.5 minutes. Note: Bake times will vary based on your oven, so always bake one single test cookie first to dial in the perfect time before doing a whole batch!

7. Cool: Let the mini cookies cool completely right on the baking sheet so they set up with a perfectly chewy center.
