Ingredients
Cheesecake Layer
- 16 oz (454g) cream cheese, softened to room temperature
- ½ cup (100g) granulated sugar
- 2 large eggs, room temperature
- ½ tbsp (7.5ml) vanilla extract
Snickerdoodle Layer
- ¾ cup (170g) unsalted butter, melted
- 1 cup (200g) brown sugar, packed
- ½ cup (100g) granulated sugar
- 2 large eggs, room temperature
- ½ tbsp (7.5ml) vanilla extract
- 2 ¼ cups (281g) all-purpose flour
- ½ tbsp (4g) ground cinnamon
- ½ tsp (2.5g) baking soda
- ½ tsp (1g) ground nutmeg
- ¼ tsp (1.3g) salt
Cinnamon-Sugar Coating
- ¼ cup (50g) granulated sugar
- 1 ¼ tsp (3g) ground cinnamon
Step-by-Step Instructions
1. Make the Cheesecake Layer
In a large mixing bowl, combine the softened cream cheese and ½ cup of granulated sugar. Use a hand mixer or stand mixer to beat them together until completely smooth and free of lumps. Add the room temperature eggs and vanilla extract. Continue mixing on medium-low speed just until the eggs are fully incorporated and the batter is silky and creamy. Set the bowl aside.
2. Make the Snickerdoodle Cookie Dough
In a separate large bowl, pour in your melted unsalted butter, brown sugar, and ½ cup of granulated sugar. Beat with your mixer until well combined and slightly creamed. Add the eggs and vanilla extract, mixing until smooth.
Sift or fold in the dry ingredients: all-purpose flour, cinnamon, nutmeg, and a pinch of salt if desired. Mix with a spatula just until a cohesive dough forms. Note: This dough will have a softer, blondie-like texture rather than a stiff rolling cookie dough.
3. Assemble the Bars
Preheat your oven to 350°F (177°C). Grease a 9×13-inch baking pan and line it with parchment paper for easy removal.
In a small bowl, whisk together the ¼ cup sugar and 1 ¼ tsp cinnamon for the coating.
Using your hands or a spatula, press exactly half of the snickerdoodle cookie dough evenly into the bottom of your prepared pan. Sprinkle half of your cinnamon-sugar mixture evenly over this base layer.
Pour the entire cream cheese mixture over the cinnamon-sugar base and smooth it out with a spatula. Finally, break up the remaining cookie dough into small pieces and sporadically place them over the top of the cheesecake layer. Finish by dusting the rest of the cinnamon-sugar mixture evenly over the entire top.
4. Bake and Chill
Bake at 350°F (177°C) for approximately 37 minutes. You will know they are done when the edges are beautiful and golden brown, and the center has just a very slight, minimal jiggle.
Let the bars cool completely at room temperature for about 2 hours. Once cool, transfer the pan to the refrigerator to chill. For a decent set, chill for at least 2 hours, but for the absolute cleanest lines when slicing, let them chill overnight.
Using a very sharp knife, lift the parchment paper out of the pan and slice the bars into small, bite-sized squares. Clean your knife between cuts to keep the cheesecake layers pristine!

Tips for Success
Room Temperature Ingredients: Make sure your cream cheese and eggs are completely at room temperature before mixing the cheesecake layer. Cold cream cheese will cause stubborn lumps that ruin the velvety texture.
Overnight Chilling is Key: Don’t rush the slicing process! Letting these set overnight in the fridge solidifies the cheesecake and cookie layers, giving you those perfect, sharp bakery-style cuts.
Clean Cuts: Wipe your knife blade with a warm, damp paper towel between every single slice. It prevents the cheesecake layer from smudging all over the beautiful cinnamon-sugar top.
Storage and Freshness
Because these bites contain a real cream cheese layer, they must be stored in the refrigerator. Place your sliced bites into an airtight container, separating layers with parchment paper if you are stacking them. They will stay perfectly fresh, moist, and delicious for up to 5 days in the fridge.
If you want to make them ahead of time, these freeze wonderfully! Freeze the individual bites on a baking sheet for an hour before transferring them to a freezer-safe bag or container. They can be frozen for up to 3 months—just thaw them in the refrigerator before serving.

I didn’t see any baking powder or baking soda in this recipe just want to make sure I’m reading it right before I make these. I’m so excited to make these for my grandson, thank you for the recipe
Hi Jeanne! Thank you for catching that. There is 1/2 tsp of baking soda in this recipe, as well. I have made it with and without and both ways have turned out just fine but I recommend using the baking soda. Happy baking!
I’ve made it twice in a week. The first time I made it I realized I didn’t have any granulated sugar so I just used all brown sugar for the snickerdoodles and like someone else in the comments, I didn’t originally see the lemon agent so I used half a tablespoon approximately of baking powder… Both the original recipe and the accidental one came out fantastic! 10/10 recipe! Highly recommend!
