  •  All-Purpose Flour: 4.5 cups | 560g
  •  Cornstarch: 1 tbsp | 8g
  •  Baking Soda: 2 tsp | 12g
  •  Salt: 1 tsp | 6g

Mix-ins & Toppings

  •  White Chocolate Chips: 2 cups | 340g
  •  Rainbow Sprinkles: 1.25 cups | 200g (plus extra for topping)
  •  Melted White Chocolate (for drizzling): 2/3 cup

Step-by-Step Instructions

1. Prep the Oven and Dry Ingredients

Preheat your oven to 350°F (175°C) and line your large baking sheets with parchment paper. In a large bowl, whisk together the all-purpose flour, cornstarch, baking soda, and salt. Set this dry mixture aside.

2. Cream the Base

In a stand mixer fitted with the paddle attachment (or using a hand mixer), combine the softened cream cheese, softened unsalted butter, granulated sugar, and light brown sugar. Beat on medium-high speed until the mixture is completely smooth, fluffy, and creamy.

3. Add the Flavor and Color

Lower the mixer speed and add the room-temperature eggs one at a time, mixing well after each. Pour in the vanilla extract, strawberry powder, and a few drops of pink food coloring. Mix until the color is evenly distributed and the batter is uniform.

4. Fold in the Mix-Ins

Gently fold the dry ingredients into the wet batter using a spatula just until combined—be careful not to overmix! Once the dough is formed, gently fold in the white chocolate chips and your chilled rainbow sprinkles.

5. Scoop, Shape, and Bake

Scoop out large dough balls weighing exactly 3.25 ounces (approx. 92g) each. Roll them briefly in your hands and flatten them slightly into thick discs before placing them on your prepared baking sheets, leaving space for slight spreading. Bake at 350°F for 12 to 13 minutes. The edges should look set, but the centers should still look slightly soft and underbaked.

6. Cool and Decorate

Remove the cookies from the oven and allow them to cool completely on the baking sheet before moving them. Once cooled, melt the white chocolate. Transfer the melted chocolate into a piping bag, snip off a tiny portion of the tip, and zig-zag a clean drizzle across the cookies. Immediately top with an extra pinch of sprinkles so they stick to the wet drizzle.
