- 1 1/2 cups (340g) Unsalted butter, room temperature
- 1 1/4 cups (250g) Granulated sugar
- 1/4 cup (50g) Light brown sugar, packed
- 3 Large eggs, room temperature
- 2 tsp (10ml) Vanilla extract
- 3 cups (375g) All-purpose flour
- 1 1/2 cups (180g) Cake flour
- 2 tsp (10g) Baking powder
- 1 tsp (5g) Cornstarch
- 1/2 tsp (3g) Salt
For the Vanilla Mousse
- 2 1/2 cups (600ml) Heavy cream, cold
- 1/3 cup (40g) Powdered sugar
- 3.4 oz (96g) Instant vanilla pudding mix (1 standard box)
- 1/2 tsp (2.5ml) Vanilla extract
- 2–4 tbsp (30–60ml) Milk (adjust for consistency)
For the Strawberry Topping
- 1 1/2 lbs (680g) Fresh strawberries, sliced
- 1/3 cup (65g) Granulated sugar
- 1 1/2 tbsp (22ml) Fresh lemon juice
- 1 1/2 tbsp (12g) Cornstarch
Step-by-Step Instructions
1. Prepare the Strawberry Topping: In a saucepan, combine the sliced strawberries, sugar, lemon juice, and cornstarch. Simmer over medium heat until the mixture thickens and becomes glossy. Set aside to cool completely.
2. Cream the Butter and Sugars: In a stand mixer, beat the softened butter with the granulated and light brown sugars until light and fluffy.
3. Add Wet Ingredients: Mix in the eggs one at a time, followed by the vanilla extract, until well combined.
4. Incorporate Dry Ingredients: Gradually add the all-purpose flour, cake flour, baking powder, cornstarch, and salt. Mix until just combined—do not overmix.
5. Bake: Scoop the dough into large balls (about 3.5 to 4 oz). Bake at 375°F (190°C) for 10–12 minutes until the edges are golden but the centers remain soft. Cool completely.
6. Whip the Mousse: In a chilled bowl, whip the heavy cream, vanilla and powdered sugar until soft peaks form. Gradually add the pudding mix and alternate with milk until the mousse is light, airy, and holds its shape but isn’t too thick to spread easily.
7. Assemble: Pipe a generous swirl of vanilla mousse onto each cooled cookie, leaving an empty space in the center to fill with topping, then finish with a large spoonful of the chilled strawberry mixture. Be careful to not over-fill the cookie or your strawberry “sauce” will drip all over the sides of your cookie.
