  • 2 cups Biscoff wafer pieces, broken up (approx. 150g)
  • 1 cup white chocolate chips (170g)
  • 1/2 cup crushed pistachios (60g)
  • 13 pistachio cream portions, frozen solid (1 oz / 28g each)

The Toppings

  • 15 Biscoff wafers, broken into pieces
  • 1/3 cup cookie butter, melted for drizzling (approx. 85g)
  • 1/3 cup crushed pistachios (40g)

Step-by-Step Instructions

1. Prep the Core: Use a piping bag to drop 1oz portions of pistachio cream onto a parchment-lined tray. Freeze these until completely solid before starting your dough.

2. Cream Butter & Sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

3. Add Wet Ingredients: Beat in the room temperature eggs one at a time, followed by the vanilla extract and 1 1/2 cups of Biscoff cookie butter.

4. Incorporate Dry Ingredients: Sift in the flour, baking soda, baking powder, cornstarch, and salt. Mix until just combined—do not overmix!

5. Fold in Mix-ins: Gently fold in the Biscoff wafer pieces, white chocolate chips, and crushed pistachios.
