For the Raspberry Topping

  • Ā 12 oz fresh red raspberries (approx. 340g)
  • Ā 2 tbsp granulated sugar (approx. 25g)
  • Ā 1 tbsp fresh lemon juice (approx. 15ml)
  • Ā Cornstarch slurry: 1/3 cup water (approx. 80ml) mixed with 2 tbsp cornstarch (approx. 16g)

For the Cookies

  • Ā 20 Oreos (with the filling) crushed finely (approx. 230g)
  • Ā 2 1/2 cups all-purpose flour (approx. 312g)
  • Ā 1/2 cup BLACK cocoa powder (approx. 40g)
  • Ā 1 tsp baking soda
  • Ā 1 tsp baking powder
  • Ā 1 tsp cornstarch
  • Ā 1 tsp salt
  • Ā 1 cup unsalted butter, soft (2 sticks / 226g)
  • Ā 2/3 cup granulated sugar (approx. 135g)
  • Ā 2/3 cup light brown sugar (packed, approx. 145g)
  • Ā 2 large eggs, room temperature
  • Ā 1 tbsp vanilla extract (15ml)

For the Icing

  • Ā 8 oz cream cheese, soft (1 block / 226g)
  • Ā 3/4 cup unsalted butter, soft (1 1/2 sticks / 170g)
  • Ā 3 to 4 cups powdered sugar (approx. 360g to 480g, taste as you mix)
  • Ā 1 tsp vanilla extract (5ml)
  • Ā Pinch of salt

For the Garnish

Ā White chocolate bar for shaving

Step-by-Step Instructions

1. Make the Raspberry Topping

1.) Combine the fresh red raspberries, granulated sugar, and fresh lemon juice in a small pot or pan.

2.) Bring the mixture to a boil over medium-high heat, then lower the heat to medium. Add your cornstarch slurry and let it simmer until noticeably thickened, stirring continuously.

3.) Remove the pan from the heat. Carefully press the mixture through a fine-mesh strainer into a bowl to remove the seeds. Tip: I recommend using a larger bowl than I used as it gets messy if you use a small one! This will be an annoying and tedious process but worth it!

4.) Place the smooth raspberry topping in the fridge to chill completely while you prepare the rest of the components.

2. Bake the Black Cocoa Cookies

1.) Preheat your oven to 350°F (177°C) and line your baking sheets with parchment paper.

2.) Place your 20 whole Oreos into a food processor and blend until they are finely crushed, achieving a fine, flour-like texture. Set aside.

3.) In a large bowl or stand mixer, cream together the softened unsalted butter, granulated sugar, and light brown sugar until the mixture is light and fluffy.

4.) Beat in the room-temperature eggs one at a time, followed by the vanilla extract, ensuring everything is well incorporated.

5.) Mix in the black cocoa powder, baking soda, baking powder, cornstarch, and salt until a uniform dark base forms.

6.) Gently fold in the all-purpose flour and the finely crushed Oreos just until combined into a cohesive dough.

7.) Scoop and roll the dough into large, smooth dough balls—this recipe yields about 13 cookies at 3.5 ounces (approx. 100g) each. Flatten them slightly into thick discs on your prepared baking sheet.

8.) Bake at 350°F (177°C) for approximately 13 minutes. Allow the cookies to cool completely before frosting.

3. Whip Up the Cream Cheese Frosting

1.) In a clean mixing bowl, beat the softened cream cheese and softened unsalted butter together until completely smooth and free of lumps.

2.) Add the vanilla extract and a pinch of salt.

3.) Gradually add the powdered sugar (between 3 to 4 cups), mixing thoroughly and tasting as you go until it reaches your preferred sweetness and a thick, pipeable consistency.

4. Assemble and Decorate

1.) Transfer your cream cheese frosting into a piping bag. Pipe a generous, smooth swirl of frosting onto the center of each cooled cookie, then gently smooth it down slightly with the back of a spoon to create a flat surface.

2.) Spoon a small dollop of the chilled raspberry topping onto the center of the cream cheese icing.

3.) Take a toothpick and gently drag it through the raspberry topping and icing to create a beautiful, custom marbled swirl pattern.

4.) Using a microplane or grater, shave fresh white chocolate directly over the tops of the cookies for that perfect, elegant finishing touch.

Tips for Success

Do Not Substitute the Black Cocoa: To get that authentic Oreo crust flavor and deep midnight-black color, you really need black cocoa powder. Regular cocoa powder won’t give you that signature bitter-sweet balance or striking contrast. If you absolutely have to substitute it, you can, but it will drastically change the flavor profile.

Strain the Berries Thoroughly: Taking the time to press the raspberry mixture through a sieve ensures your swirl is perfectly smooth, silky, and elegant without any distracting seeds.

Room Temperature Ingredients: Make sure your cream cheese and butter are truly softened to room temperature before beating your icing to avoid an unwanted lumpy texture.

Storage & Freshness

Refrigeration is Key: Because of the fresh dairy in the cream cheese frosting and the fresh fruit in the raspberry swirl, these cookies must be stored in the refrigerator. Place them in a single layer inside an airtight container for up to 4 to 5 days.

Serving: For the absolute best texture, pull the cookies out of the fridge about 15–20 minutes before serving so the cream cheese frosting can soften up just slightly, while keeping the cookie base perfectly fudgy.

Method
 

  1. Make the Raspberry Topping: Boil raspberries, sugar, and lemon juice over medium-high heat. Lower heat, stir in the cornstarch slurry, and simmer until thickened.
  2. Strain & Chill: Press the mixture through a fine-mesh strainer into a bowl to remove seeds, then chill in the fridge. (Tip: Use a large bowl to avoid a mess!)
  3. Cream & Mix Wet: Cream softened butter and both sugars until fluffy. Beat in eggs one at a time, then mix in the vanilla, black cocoa, baking soda, baking powder, cornstarch, and salt.
  4. Fold & Bake: Fold in the flour and finely crushed Oreos. Roll into 13 large balls (approx. 3.5 oz each), flatten slightly, and bake at 350°F (177°C) for exactly 13 minutes. Cool completely.
  5. Whip Frosting: Beat softened cream cheese and butter until smooth. Gradually blend in vanilla, a pinch of salt, and powdered sugar until thick and pipeable.
  6. Decorate: Pipe frosting onto each cookie and flatten slightly. Top with a dollop of raspberry sauce, swirl with a toothpick, and finish with fresh white chocolate shavings.
