This recipe takes that childhood favorite and completely elevates it. We are talking bite-sized, ultra-chewy mini cookies packed with rich chocolate chunks and a deeply nutty brown butter base. Paired with a luscious, velvety buttercream that is perfectly balanced, this is the dessert recipe you’ll be making on repeat.

The secret to making these the absolute best snack packs on the internet lies in the flavor contrast. Online, it’s common to see frosting recipes overloaded with sugar, but this specific vanilla bean buttercream uses a minimal amount of powdered sugar to let the real vanilla bean and a touch of salt shine. When you dip a rich, brown-butter cookie into this smooth frosting, it tastes exactly like high-end soft-serve ice cream. Ingredients

For the Cookies:

  •  1 cup unsalted butter, browned (227g)
  •  1 cup dark brown sugar (200g)
  •  1/2 cup granulated sugar (100g)
  •  2 large eggs, room temperature
  •  1 egg yolk, room temperature
  •  1 tbsp vanilla extract (15ml)
  •  2 1/4 cups all-purpose flour (280g)
  •  1 tsp baking soda (6g)
  •  1 tsp salt (6g)
  •  1/2 tsp cornstarch (1.5g)
  •  2 cups chocolate (340g) — use a mix of mini chocolate chips and chopped milk chocolate chunks

For the Buttercream:

  •  1 cup unsalted butter, softened (227g)
  •  2 1/2 to 3 cups powdered sugar (approx. 300g–360g)
  •  1 tbsp vanilla bean paste (15ml)
  •  1/4 tsp salt (1.5g)
  •  1–2 tbsp heavy cream (15ml–30ml)

Step-by-Step Instructions

1. Brown the Butter

Slice your butter into cubes and melt over medium heat in a saucepan. Allow it to foam and swirl it frequently until it turns a deep amber color and you see toasted brown specks at the bottom. Pour the brown butter into a bowl and place it in the refrigerator to chill for about 30-45 minutes. Do not let it freeze solid; you want it solidified but soft enough to be at a pliable, room-temperature consistency just no longer a liquid. 

2. Build the Cookie Dough

Once the brown butter has creamed back up, place it in a stand mixer or use a hand mixer to cream it together with the dark brown sugar and granulated sugar until fully combined. Add the room temperature eggs, egg yolk, and vanilla extract, beating until light and fluffy.

3. Add Dry Ingredients & Chocolate

Slowly fold in your dry ingredients (all-purpose flour, baking soda, salt, and cornstarch) using a spatula until just combined. Fold in your chocolate. A mix of mini chocolate chips and tiny milk chocolate chunks works perfectly here to distribute the chocolate evenly across mini cookies. Cover the dough and chill in the fridge for 1 hour.

4. Roll and Bake

Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper. Roll the dough into small, uniform mini cookie balls (approximately 1 tsp in size) Bake for about 6.5 minutes. Take them out when the edges are set but the centers are still soft. Let them cool completely. (I always recommend baking a few test cookies first before baking a whole batch!)

5. Whip the Vanilla Bean Buttercream

In a clean bowl, beat the 1 cup of softened unsalted butter and vanilla bean paste until completely smooth. Gradually add the powdered sugar, salt, and heavy cream. Beat on high until the frosting is incredibly smooth, airy, and creamy. 

6. Assemble

Transfer the buttercream into a piping bag. Place your cooled mini cookies into your serving containers next to a small cup, and pipe a smooth, generous swirl of buttercream into the cup right alongside them.

Tips for Success

 Test a Few First: Because every oven runs slightly differently, bake a small test batch of 2 or 3 mini cookies first to dial in your exact timing.

 Go for the Underbake: For the ultimate Dunkaroos experience, recommend underbaking the cookies just a tiny bit. This keeps them wonderfully soft, pliable, and ideal for dipping without breaking.

 Quality Over Everything: Because the buttercream relies on a lighter sugar ratio, use a high-quality vanilla bean paste and a pinch of salt to give it that premium flavor.

Storage and Freshness

 Room Temperature: Store the cookies in an airtight container at room temperature for up to 5 days.

  4. Bake the Mini Cookies: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper. Roll the chilled dough into uniform, 1-teaspoon-sized balls. Bake for 6 to 7 minutes until the edges are just set but the centers remain soft. Cool completely.
  5. Whip the Buttercream: Beat the softened butter and vanilla bean paste until completely smooth. Gradually add the powdered sugar, salt, and heavy cream. Beat on high speed until light, fluffy, and the consistency of smooth soft-serve ice cream.
