Ingredients

For the Chocolate Cookies:

  •  1 cup unsalted butter, softened (225g)
  •  1 cup granulated white sugar (200g)
  •  1/2 cup light brown sugar, packed (100g)
  •  2 large eggs, room temperature
  •  1 tsp vanilla extract (5mL)
  •  1/2 cup unsweetened cocoa powder (50g)
  •  1 tsp baking soda (5g)
  •  1 tsp cornstarch (3g)
  •  1/2 tsp salt (3g)
  •  2 cups all-purpose flour (240g)

For Dipping & Assembly:

  •  1 cup Nutella or preferred hazelnut spread (295g)
  •  1 1/2 cup hazelnuts, finely chopped (150g)
  •  5 Ferrero Rocher truffles (Optional)

Instructions

 Preheat and Prepare: Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.

 Cream Butter and Sugars: Cream the softened unsalted butter, granulated white sugar, and packed light brown sugar together in a large mixing bowl until the mixture is light and fluffy, about 2 to 3 minutes.

 Add Wet and Flavoring Agents: Incorporate the room-temperature eggs one at a time, followed by the vanilla extract, baking soda, cornstarch, salt, and unsweetened cocoa powder. Mix thoroughly until smooth and creamy.

 Fold in the Flour: Gradually add the all-purpose flour to the wet mixture, folding gently with a spatula until just combined. Do not over-mix.

 Chill the Dough: Cover the bowl tightly with plastic wrap and chill in the refrigerator for 1 hour.

 Scoop and Portion: Roll heaping tablespoons of the chilled dough (about 15g each) into uniform balls and place them on the prepared baking sheets, leaving space for slight spreading.

 Run a Test Batch: Bake a small test batch of 2 to 3 cookies first to calibrate your oven timing before baking the whole batch.
